My roommate and I have a can of salmon sitting around because it was cheap and doesn't need to be cooked, but we're not quite sure what to do with it. Do you put mayonase in it like you do canned tuna? Make sandwitches? Eat it right out of the can? What?

For everyone who's been giving recipies that require cooking... we don't have an oven or any pots or pans. So any cooking that goes on has to be in the microwave.

You can cook it and eat it with mayo if you lke. Also you can make sandwishes with it or sandwich spread...

Fiesta Spread:
(15 Minute Meal)
1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
1/2 cup chunky spicy salsa, drained (if runny)
1/4 cup low-fat mayonnaise
1 cup finely chopped celery, carrot, jicama, or zucchini
1 fresh minced jalapeño pepper
Assorted breads for sandwiches (pita, wheat, sourdough, bagels, etc.)

Lettuce or spinach leaves, if desired

Makes about 3 cups (4 to 6 servings).

Nutrients per serving: 155 calories, 7.5g total fat, 2g saturated fat, 44% calories from fat, 49 mg cholesterol, 17g protein, 4g carbohydrate, 1g fiber, 669mg sodium, 192mg calcium, and 1.6g omega-3 fatty acids.

East-West Spread:
(15 Minute Meal)
1/2 to 2/3 cup low-fat mayonnaise
1 teaspoon wasabi paste*
1 can (14.75 oz.) or 2 cans (7.5 oz. each) traditional pack Alaska salmon OR 2 cans or pouches (6 to 7.1 oz. each) skinless, boneless salmon, drained and chunked
1 cup finely diced seeded cucumber OR celery
1/4 cup sliced green onions OR 2 Tablespoons chopped chives
Assorted breads for sandwiches (pita, wheat, sourdough, bagels, etc.)
Lettuce or spinach leaves, if desired

*Additional wasabi paste may be added to taste

Makes about 3 cups (4 to 6 servings).

Kid's Favorite Salmon Salad Spread:
(10 Minute Meal)
1 can or pouch (6 to 7.5 oz.) Alaska salmon, drained and chunked
1/4 cup low-fat mayonnaise
1/2 teaspoon dill weed
6 slices white or whole wheat bread
Tomato slices
Lettuce leaves

Recipe may be doubled using 1 can (14.75 oz.) or 2 cans/pouches (6 to 7.5 oz. each) Alaska salmon.

Makes 3 servings.

Sure... Salmon Patties

1 can Salmon (clean all bones out and mash Salmon in a bowl

1 med. Onion diced fine

1/2 pkg. Saltines finely crushed (add more so mixture isn't soggy)

1 egg slightly whipped

1/2 teap. pepper
(Do not add salt as Crackers are salted)

Add ingredients to salmon and mix well together. Make patties like hamburgers.

Fry in a small amount of butter and brown on both sides

I prefer making a cream gravy and add a can of peas to pour over the salmon patties when served.
An excellent side dish with this is Steamed Rice.

I agree with making patties. If you have the large can of salmon use a sleeve( 1/4 of a box) of crushed saltine crackers, 2 eggs, a spoon of flour, pepper( salt is on the crackers), and form into about 6-8 patties. Place into your microwave in a glass dish, cook about 3 min. or until the egg is done( the salmon is already cooked).If you have a browner use it or the patties will be done but not very browned. Our favorite meal is mashed potatoes with gravy and english peas with the salmon patties. You can make both in the micro as well. If you are not much of a cook, use instant potatoes.

If you must, it would mix just fine with mayo and sweet pickle relish to make a typical high fat, high cholesterol, high sodium middle america suburban lunch just like a tuna fish salad sandwich, but it's a shame to do that to something that is inherently pretty good for you. Salmon is loaded with good vitamins and omega-3 fatty acids that are very healthy, so please don't ruin that by gunking it up with a lot of junk food additives?

Do a better tasting and healther version instead? You could mix it with olive oil, lemon and capers with a little minced green onion and red or yellow bell pepper, for example... then serve it either as a salad with lettuce and veggies or on whole grain pita bread for a sandwich. It would probably make a very good salade nicoise just plain right out of the can, too.

Salmon is already cooked in the can. You can crumble up a package of soda crackers, add an egg and the can of salmon. Make some patties about the size of a small hamburger patty and them cook them in the Microwave until they smell done...

Eat by theirselves on put them on a bun.

This is just a variation of Tuna Patties, but it does work... especially for a college student who will eat anything that doesn't eat him first.

Most of the tips you've received so far are good. Salmon loaf and salmon patties are what I mostly use it for and recipes for those are abundant. Everything that has been canned has already been cooked during the canning process, so cook it only if you want it hot. For instance, use it right out of the can for cold pasta salad.

This is my grandma's (and mom's) recipe for a Salmon Zucchini Bake that uses canned salmon. My wife adores it.

Salmon Zucchini Bake
1 can (7 3/4 oz) salmon
1 1/2 lb. zucchini (about 4 medium)
1 clove garlic
2 Tbsp. butter
3/4 cup grated sharp cheddar cheese
1/4 cup grated parmesan cheese
1 cup dairy sour cream
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. mixed italian herbs
1/2 cup buttered bread crumbs (see below)

Drain salmon and break into chunks with fork. Slice zucchini 1/4" thick. Saute zucchini and garlic briefly in butter. Add salmon, cheddar and parmesan cheeses, sour cream and seasonings.

Turn into casserole dish and top with buttered bread crumbs. Bake at 375 degrees for 20 minutes.

Buttered bread crumbs:
Melt 2 Tbsp. butter and mix into bread crumbs

Salmon Patties

INGREDIENTS:

* 1 can (16 ounces) salmon
* 1 tablespoon lemon juice
* cold water
* 2 med. eggs, beaten
* dash pepper
* 1 slice bread, fine crumbs
* 1/4 cup finely minced celery (with leaves)
* 2 tablespoons finely minced green onion
* 1 tablespoon finely minced bell pepper
* 1/3 cup chopped onion
* 2 tablespoons flour
* 1 teaspoon baking powder
* 2 tablespoons vegetable oil (canola)

PREPARATION:
Preheat oven to 350°. Drain salmon, reserving liquid. Discard skin, but save bones. Flake salmon lightly, but well, with a fork. Crush bones and mix with the salmon.

Add the lemon to the reserved salmon liquid and enough cold water to make 1/2 cup liquid; add to the salmon.
Add all remaining ingredients and mix thoroughly. Form into 4 patties. Bake for 25 to 30 minutes.

Heres an easy recipe hun
if its got skin and bones, take 'em out, if it does not proceed with the recipe
1 can salmon (including juice, dont drain it)
half a sleeve or so of club crackers crushed
3 tablesoons chopped fine onion
1 or 2 tablespoons dried dill
dash of cayanne pepper
lots or reg. pepper
one egg
mix together, if still a bit wet, crush more crackers, stir till it will hold its shape, fry with just a touch of oil, till golden brown, flip and do the same to the other side, serve with tarter sauce or by itself yummmmmmmm

Three ways I know of:
1. like tuna salad.
2. Out of can, on bed of greens, with salad dressing dripped on.
3. Using a prepared Salmon mix (eg: Zataran) as per directions, then pan fry.

mix it with egg onion cracker crumbs and a little baking soda and fry it up as salmon patties. I hate salmon but i love salmon patties
