CHICKEN SPINACH SALAD
1 bunch fresh spinach washed and dried, or cheat and get the prewashed ones at the market
1 chicken breast, grilled or boiled, then diced and chilled.
1/4 c dried cranberries
1/4 cup chopped pecans or walnuts or both.
sunflower seeds
feta cheese
a viniagrette dressing
Mix ingredients together and serve chilled. Goes great with a glass of iced tea! Feeds 1-2
MEXICAN CABBAGE SALAD
1 cabbage, finely sliced
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste
In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well.
Chill for 1 hour and serve cold

I agree-a nice big salad! With tomato and cucumber.
I like a tuna salad, or salad with chicken. Satisfies you more.
Also, a cold pasta salad is good. Make it the night before so you don't have to cook the pasta during the heat of the day.
Oh, and sandwiches. Always a good standby.

I like to buy a loaf of french bread, from my local stores bakery. Buy lunch meats cheeses and lettuce,onions etc..and make homeade sub sanwhiches srved with salds such as potato salad or macaroni salads. Have puddings and store bought(bakery) cakes, cookies, cold fruit maybe

Cold potato salad , tuna salad , macaroni salad , cole slaw , chicken salad , regular salad with a lot of different things like cucumbers , carrots , cauliflower , broccoli , cherry tomatoes , bean sprouts , watercress etc...

Tabouli or taco salad...
Tabouli...soak bulgur wheat in water according to package directions (if bulk, mix 1 part bulgur to two parts water) Mix with lemon juice and olive oil, cucumber, celery, mint, green onions, other veggies of your choice, raisins, apples, sunflower seeds, etc....no limits! Eat all you want for days!
Taco Salad:
Lettuce, tomatoes, black olives, green onions
Cook ground beef, season highly w/ chili powder and cumin. Drain grease!
Catalina Dressing
Cheese
Fritos
Toss all together and serve with guacamole and sour cream!
