The Old Testament was compiled somewhere between 200 A.D. and 100 B.C.. The New Testament was somewhere in the 4th Century A.D.. Also, they have an idea of when most of the New Testament books were written, but the Old Testament is more unsure. If you want to know, go to Barnes and Noble or Borders and pick up a New International Version Study Bible because before each book, they have a Who? What? Where? When? and Why?.

Who wrote the books and when they wrote them is the subject of debate by many scholars to this day.
The bible as we know it was first adopted by Roman Emperor Constantine in 325 CE (ad) after it was invented by the Nicene Council. They also adopted the "Jesus is God" myth.
The oldest known bible to currently exist is the Codex Sinaiticus and it was "written" in the middle of the 4th Century, exact date uncertain.
King James edited Constantine's bible in 1611 CE.
And, it has been established that the bible has been altered, most notably by Sir Isaac Newton. Yet, his discovery has generally been ignored since it casts serious doubt on the "Jesus is God' myth invented by the Nicene Council.
Newton secretly became a Unitarian (Jesus is not God) after making his discovery. But, he could not make his findings known because the Church of England prosecuted anyone who rejected Trinitarian doctrine.
