Fixing it for dinner and I usually fix it lemon pepper but thats getting old. Any new ideas out there????

keep the lemon a dash of salt and add a lot of onions some bell peppers and a can of beer steam it for 20 minutes.

My recipe for baked Tilapia is so simple and quick

I season each filet with a little s&p
then lightly spread a very little mayonnaise on and
then I tak a sleeve of saltines and smoosh them , you want crumbs but chunky crumbs, I sorinkle a crust of the crubs on top of each filet and dot the top with a pat of butter.

I bake the filets at 425 degrees for 8-10 minutes of until the filets are done. and either serve a wedge of lemon with it or sqeeze a few drops over each filet.

( I keep a case of tilapia filets in the freezer for quick meals; it usually costs about $10 at walmart)

Unless I can go to the fresh fish market I buy frozen at the store. most of the fish in the glass cases are brought in frozen and therefore you don't want to refreeze them.

After the filets are done I serve them with a hearty white and wild rice pilaf ( Use Uncle Ben's Chicken Wild rice white rice. I add sauteed mushrooms, onion, celery and a little red bell pepper)

and usually snow peas or peas and pearl onions. Also a nice lemony dessert

a nice Sauvignon Banc or Fume` Blanc is good with the whole meal. I like to get , when I can Find it a Fall Creek sauvignon Blanc/ semion blend

After rinsing, try dusting with flour, rolling it in egg and then covering with panko (Japanese bread crumbs).

Heat up a skillet or wok with about 1/2 to 3/4 inch peanut oil and dip in the tilapia about 2-3 min per side. Place on a drying rack with some newspaper underneath to wick away excess oil. Garnish with some parsley and a slice of lemon.

To avoid wasting the oil, use the remaining heated oil to make some fries or perhaps some onion rings as a side dish.

Try baking it in coconut with a little pepper and salt or any other herbs you might use in other recipes.

saute chopped onion, parsley, and chopped tomatoes in a pan earlier (put them in pan in that order). Place on top of fish and bake.
