The difference is the flavour, vanilla extract is a bit stronger in flavour. I myself prefer to use extract over essence. I use equally in part as called for in the recipe. It all depends on if you like a bit more flavour as to what you want to do.

Good Luck

Both vanilla essence and vanilla extract are extracted from cured vanilla pods, and are used to add flavour in baking, desserts and ice-cream. Extract is stronger than essence, and the flavour is much more intense, so you should use less. Most good recipes will indicate whether essence or extract is specified. Don't forget the chef's favourite, though - vanilla pods (also called vanilla beans). They are the long, dark dried seed pods of an orchid native to Mexico. The best vanilla pods are flexible and fragrant. The seeds are used to flavour sweet sauces and ice-cream, and the whole pod may be stored in a jar of sugar. Use the sugar in baking or desserts, and the flavour of the vanilla will be deliciously infused.

1 tsp Vanilla Extract= 1 1/2 tsp Vanilla Essence

Vanilla essences are two and three fold vanilla extracts. They are stronger than extracts and usually only used by professionals. Recipes usually give quantity for vanilla extract. Vanilla essence and vanilla extract are both extracted from cured vanilla pods. Extract is stronger than essence, and the flavor is much more intense, so if you use the essence, you’ll want to use more, 1 tsp vanilla extract to 1-1/2 tsp vanilla essence. Whichever you decide to use, make sure it is PURE vanilla extract or essence, as imitation will leave behind a bitter taste. Here are some links that you may find interesting:

Vanilla essence is synthetic and although it gives an ok result if you ever use vanilla extract which is extracted from the vanilla plant you will understand the difference. The flavour is so much nicer and doesn't have the same chemical tase or smell. The difference in quantities is tsp is a teaspoonful (approx 5ml) and tbsp is a tablespoonful (approx 15ml).

not sure which is stronger but vanilla extract is actually made from vanilla pods whereas i think vanilla essence just tastes like vanilla but doesn't necessarily have any vanilla in it.

1 tsp is one teaspoon.
