Taurus is an earth sign and they are very grounded people. They don't usually act on something until they have really thought it through and they usually like a calm quiet atmosphere and can't handle chaos, like to stay in control and be very aware of their environment. It's because they like to keep organized that they can get angry when people mess up their environment or are bouncing off the walls, being dishonest etc. It's sort of a preventative measure to make sure that they remain in control of their own lives and surroundings. I'm a Taurus and I know I can get very controlling when others don't respect my space.

It's not just Taurus. I have a couple of friends and my mom are Taurus and although my friends like control, my mom was never really like that when she was alive. However, I have another friend who is an Aries and he was a major control freak. Some Capricorns can be as well because I saw those personality signs in my ex. I think it has to do with being overly ambitious as well - they're all kind of linked.
