Your question is a bit vague, but I know that boiling the bones and connective tissue of animals can result in the release of collagen, a form of gelatin, When this is simmered down even further, it can be used as a sauce base for many cooking recipes and great gravies.

There are two types of gelatin... Regular gelatin which is not kosher or halal. Regular gelatin is made up of pig or horse marrow from the hooves.

Kosher Gelatin is from kosher & halal animals such as buffalo, beef, agar etc.

Gelatin is made from boiling the bones of animals. They started using Turkey at first but I think they can uses others as well. (Remember the jelly-like stuff around the turkey after leftovers come from the fridge?) Now I believe they may have a synthetic substitute. (I hope.)
