I don't care that much about soccer like Europeans.

Does the sentence above mean Europeans like soccer or not?

It's just badly written.

If the Europeans like soccer, it should say:
I don't care AS much about soccer AS Europeans DO.

If the Europeans don't like soccer, it should say:
Like Europeans, I don't care that much about soccer.

or at least: I don't care that much about soccer, like Europeans. (with a comma)

As written, all we know about the Europeans is that the soccer I don't care about is somehow like them.

The sentence is not written properly. It should have been written something like....."I don't care as much for soccer as the Europeans do". It actually means that Europeans love soccer.
