A big plate of various fresh vegetables with a good bowl of something to dip them into. Some tasty pieces of different types of cheese and crackers too.

Okay--now I get it--you wanted side dishes! Well, I have no doubt your baked chicken is great, but here's something interesting to do with baked chicken as an ingredient to an appetizer!

Here is one of the favorite appetizer recipes using baked chicken

Chicken Enchilada Dip

Yields: 30 servings

"This spicy baked chicken and cheese dip is a real crowd pleaser, and tastes great with chips or crackers."

INGREDIENTS:
1 pound skinless, boneless chicken breast halves
1 (8 ounce) package cream cheese, softened
1 (8 ounce) jar mayonnaise
1 (8 ounce) package shredded Cheddar cheese
1 (4 ounce) can diced green chile peppers
1 jalapeno pepper, finely diced

DIRECTIONS:
1. Preheat oven to 350 degrees F (175 degrees C). Place chicken breast halves on a medium baking sheet.

2. Bake in the preheated oven 20 minutes, or until no longer pink. Remove from heat, cool and shred.

3. Place shredded chicken in a medium bowl, and mix in cream cheese, mayonnaise, Cheddar cheese, green chile peppers and jalapeno pepper. Transfer the chicken mixture to a medium baking dish.

4. Bake uncovered in the preheated oven 30 minutes, or until the edges are golden brown.

Ok, I'm a little suprised to said appetizer most people look for sides but i guess you have that covered! Well I can think of two sides one raw and crisp the other warm and earthy here they are.

Danish Mushrooms

1 lb mushroom caps
2 tablespoons olive oil
2 tablespoon butter
1/2 teaspoon salt
1/2 teaspoon paprika
1 garlic clove (crushed)
1 green onion (chopped)
3 tablespoons fresh parsley (chopped)
1/2 tablespoon fresh dill weed (chopped)
2 teaspoons basil

makes 8 servings

15 minutes 10 mins prep

Clean mushrooms removing stems.
Heat oil in a large non-stick skillet over medium heat. Stir in salt, paprika, garlic and green onion.
Increase heat, add mushrooms, sauté three to five minutes until mushrooms are glazed and coated.
Remove mushrooms from heat. Toss in parsley, dill, basil and butter. Toss
Serve immediately.

Cheddar Stuffed Celery

3 stalks celery, cleaned
1/2 cup nippy cheddar cheese, grated
2 oz cream cheese
1/2 tablespoons mayonnaise
1 teaspoon paprika (optional)
cererly salt( optional)

makes 6-8 pieces

5 minutes 5 mins prep

Mix the mayo,cheddar,& cream cheese together to make a spreadable paste.
Fill the stalks.
Cut into serving size pieces.
Sprinkle with paprika&celery salt or leave plain & serve.
