When green wood is cut, it has a high moisture content and has to season or dry. Therefore it dries out faster and burns better.

I would say so you can more easily controll the temperature of your fire, You get a big peice on there, and it's gonna get hot! I'm not sure if youre cooking on an indoor stove or, like, a campfire, either. on a campfire, you really just want coals, and not wood burning. on an indoor stove, you want an even heat, not a bunch of temperature fluxuations., and that is easier to maintain with smaller peices.
