It is fine since he is no longer your superior / boss. You are not crossing any lines... The only problems I can see with this is that he could become your boss again with being transferred... the other is that other teachers may think you have 'pull' or getting favores but this would be strictly in their minds....

If you don't like him - refuse the dinner date. Don't say that you are busy because that will let him be able to choose other dates and you won't be able to back out. Just say that "Sorry I cannot have the dinner date with you" Don't provide a reason unless he asks. If he does tell him the truth or something aroudn it "It does not feel right and I stand my ground when I say so. Sorry"
If you like him - even if it doesn't work out, your profession and job will not suffer consequences as he was your former boss.
If you like him as a friend, perhaps you can say "Great. Just a friends night out." or "That sounds good. Is it okay if I bring my other friends also. We can have like a group hanging out. I really need some off time just to hang out with friends. Is it okay?" :)

You are having the dilemma because you have the preconceived image of him being the principal and not the man. If you can see the man and just understand that the principal is his job not his image then you can better make a judgement.

If he no longer is in your place of employment, if he no longer is work superior that is, than it is OK to ask you. You need to either accept the date or explain to him it ain't happening! When you say court you, are you referring to dating? you asked 'what will i do?', well? What will you do?

is he hot? would you want a relationship with him? is he a player type? will he be discreet? or will he talk about it at work? do you actually like him? think about all of this, if you do go for it and set some ground rules so it does not get akward at work.
