i make it real simple and it is good. brown your hamburger, drain set aside. make rice a roni spanish rice flavor according to directions on box. clean your peppers cut off the tops. put some cooked rice a roni in a glass baking dish, just enough to hold up your peppers. put remaining rice and hamburger togather and stuff peppers. put a little mozzarella cheese on top, pop in oven on 325 till peppers are done.

Stuffed Green Peppers
Serves 6
1 1/2 lbs ground beef
1/2 cup of rice (mixed into the ground beef)
1 onion, chopped
1 clove garlic, chopped
1/4 cup (1 oz) Bel Paese, Fontina, or Monterey Jack, shredded
1 egg
1/4 cup parsley, chopped
1 1/2 teaspoons salt
1/2 teaspoon pepper
6 green peppers
1 (1-lb) can tomato sauce
6 cheese slices
In a mixing bowl,combine these nine ingredients and knead them thoroughly, using half of the tomato sauce.
Remove just the stem ends from the peppers.
Carefully remove the core and seeds. Stuff the peppers with the meat mixture. Stand the peppers in a lightly buttered baking dish. Over them, pour the remaining tomato sauce. Top each pepper with a slice of the cheese you have used in the meat mixture.
At this point, you may stop and continue later. (Also, at this point the dish may be frozen for cooking at your convenience.)
Bake the peppers at 350 degrees F. for 1 hour. Frozen peppers will take longer to bake.

6 green bell peppers, tops cut away and seeds removed
2 tablespoons vegetable oil
1 cup finely chopped yellow onions
1/2 cup finely chopped green bell peppers
1/2 pound ground beef
1/2 pound ground pork
1 tablespoon minced garlic
1/4 cup finely chopped fresh parsley leaves
3/4 teaspoon salt
1/2 teaspoon ground black pepper
Pinch red pepper flakes
2 cups cooked long or medium-grain white rice
8 ounces tomato sauce
Water
Preheat the oven to 350 degrees F.
In a large pot of boiling water, parboil the peppers until just tender, 2 to 3 minutes. Remove with a slotted spoon and dry on paper towels.
In a large saute pan or skillet, heat the oil over medium-high heat. Add the onions and chopped bell peppers and cook, stirring, until soft, about 3 minutes. Add the beef, pork, garlic, parsley, salt, black pepper, and pepper flakes. Cook until the meat is browned, stirring with a heavy wooden spoon to break up the lumps, about 6 minutes. Add the rice and tomato sauce and stir well. Remove from the heat and adjust the seasoning, to taste.
Pour enough water into a baking dish to just cover the bottom, about 1/8-inch deep. Stuff the bell peppers with the rice mixture and place in the baking dish. Bake until the peppers are very tender and the filling is heated through, 25 to 30 minutes.
Remove from the oven and let rest for 10 minutes before serving.

OMG! hubby just told me he wanted that for dinner tomorrow. The way I cook mine is.
Bell Peppers (6) when you cut off the tops save them for later use.
Box of instant rice 14 oz
Ground Beef (2 to 2 1/2 pounds)
Canned Crushed tomatoes (2 to 3 cans) depends on taste
Onion (1 medium finely diced)
salt and pepper to taste
Worcestershire sauce also to taste.
Start by cooking your rice follow directions on box. I use the whole box.
Cut the tops off of peppers remove stems rinse well. dice the tops up and throw in to pan with the ground beef and onions. Cook until ground beef is done. Drain grease.
Boil the peppers til nice and tender.. the color will change from bright green to dull green. (I just don't like a hard peppers)
In a large bowl mix the ground beef mixture with the crushed tomatoes and rice.
In a large casserole dish. (slightly oiled) put down a layer of rice mixture. Stand the peppers up and fill with rice. Add the remaining rice around the peppers. Put in a 350 degree over for about 30 min. I like the tops to be a little brown and crisp.
Note. don't use too much Worcestershire or they will be kind of hot n spicy. Also some people top with tomato sauce, I just don't like that personally.

1 (14-1/2 ounce) can Italian Style stewed tomatoes, undrained
1 tablespoon ketchup
1/2 teaspoon dried oregano
Heat oven to 350°F. Cut tops off bell peppers; remove seeds.
Combine ground beef, onion, rice, 3 tablespoons ketchup, salt, 1/2 teaspoon oregano and pepper in large bowl, mixing lightly but thoroughly. Spoon into peppers; stand peppers in 8 x 8-inch baking dish.
Combine sauce ingredients; pour over peppers. Cover dish tightly with aluminum foil. Bake in 350°F oven 1-1/2 hours to medium (160°F) doneness, until beef is not pink in center and juices show no pink color.
Makes 4 servings.

yep this is a greek dish - basically its 500g mince lamb and beef mix is good but either will do - add 1/4 cup approx. of dry rice and a can of tomatoes chopped and 3tbl tomato paste. season with salt and pepper - put into the peppers then into a pot - good idea to line pot with some cabbage leaves first as it can catch lighty underneath. cover with hot chicken /beef stock mixed with 2-3 tble of tomato paste put a small plate on top to hold pepper down and cover with pot lid. Cook for 1 - 2 hours on a simmer - food is ready - can also be down in a slow cooker and eat when you get home

I don't know the exact recipe for this, but instead of ground beef and rice,why don't you try using a ground sausage and stuffing filling.If you really want it simple,prepare stove-top stuffing and mix it with seasoned ground sausage and diced onions.Stuff into peppers with the tomato sauce.You could also add mushrooms to the sausage.

I am making stuffed bell peppers as I write. ground beef, rice, onions and celery, garlic and parsley, I use rotell tomatoes with the green chilis in it. I use lemon pepper and garlic powder and creole seasoning. You can use just about any seasoning you wish. Add breadcrumbs for texture. good luck

this is a easy recipe, take 4 good size peppers, cook ground beef, cook i package of any kind of Spanish rice your choice, then in a bowl mix rice and ground beef then add some tomato juice put in peppers then pour remaining juice over peppers..then salt and pepper cook for about 45 minutes ...its not real fancy..but it taste great and its easy to cook...

The secret to really good stuffed peppers is to clean the pepper and then soak them in salt water at least overnight. This will take the bitter taste out of them.
