we're having a bbq tomorrow and we want to serve a mac. salad that's not too bland or too much mayo.What gives it that "zing"?

I usually add relish, mustard, celery salt, salt and pepper, and hard boiled eggs to mine with the mayo. I always get compliments.

This is a recipe that I have used for years. Whenever we get together, everyone wants me to make my mac salad.

Boil until tender:
1 box elbow macaroni (1 lb box)
When cooked, run cold water over it to cool
Hard boil:
6 eggs
When cooked, peel and dice.

While this is cooking add the following to a large bowl:
1 medium onion
1 can tuna
1 can peas
1/2 jar salad olives (save 1/2 cup of the juice from olive jar)
3 apples (diced) (Mac apples work best)

When macaroni and eggs are cooled enough, add to bowl and mix thoroughly.

Add the 1/2 cup olive juice and enough Miracle Whip salad dressing to coat all ingredients.

Cool and serve at your next gathering. It will be a hit!!!

Scandinavian Macaroni Salad:

Ingredients

1/4 - cup French dressing

1 - apple, peeled and diced

1 - tablespoon lemon juice

1 - small onion, minced

1/2 - cup mayonnaise or Miracle Whip

1/8 - teaspoon paprika
Directions

* Cook the macaroni in salted water about 15 minutes or until tender.
* Drain, rinse and cool.
* Add the French dressing and chill for 2 hours.
* In a small mixing bowl, combine the apple, lemon juice, onion, and mayonnaise.
* On salad plates, place macaroni mixture on the bottom.
* Top the apple mixture on macaroni.
* Garnish with the paprika.

Instead of Mayo. I mixed corn, pea, with or without ground meat. No tomato sauce.

This is the BEST:
1 (16 ounce) package macaroni
1/2 cup mayonnaise
1 cup cucumber - peeled, seeded and chopped
1 tablespoon dried minced onion
1 cup diced ham
1 cup shredded Cheddar cheese
3 tablespoons olive oil
3 tablespoons white wine vinegar
salt and pepper to taste

DIRECTIONS:
In a large pot of salted boiling water, cook pasta until al dente, rinse under cold water and drain.
In a large bowl, combine the pasta, mayonnaise and mix well. Stir in cucumber, onion, ham and cheese. Mix well. Drizzle oil and vinegar over top and toss. Refrigerate for at least 4 hours.

I use macaroni, obviously, chopped dill pickles, chopped onion, chopped celery, chopped up hard boiled egg, miracle whip or salad dressing, mustard, and a little pickle juice. Salt and pepper to taste. Is awesome.

Use whatever veggies you have on hand peppers, cucumber carrots etc I like to add a little jalapeno to mine and I mix mayo with sour cream so its not so heavy with mayo I also use multi colored spiral pasta spice it up however you like dill is nice its refreshing and with a little lemon salt pepper and garlic powder it's good if you want to add shrimp or chicken too.

Try the macaroni that is orange green and plain add vegtables i.e., broccoli, cauliflower,chopped olives,cucumbers, whatever else you would like sherreded cheese, and fat free ranch. it's a cool salad just right for hot days and barbeque

Cooked macaroni.
Diced Vidalia onion, celery, red bell pepper.
Chopped green olives w/pimiento.
Mayo.
Salt. Pepper. Garlic powder. Hot Hungarian paprika.

go to allrecipes.com -amish pasta salad-cut the sugar to 1/3 then add as you go. cut the miracle whip to 1/3 and add as you go to taste. this recipe tends to be very sweet if you add the sugar and miracle whip amounts called for!
