Cut up some Velveeta cheese into cubes and place in a microwave same bowl. Add Pace salsa to your liking. Cook covered for 45 seconds. Stir. If cheese isn't melted completly, cook for about 45 more seconds until completly melted.

My best effort so far is Velveeta cheese, and a can of regular Rotel tomatoes. If you want it really spicy, get a can of chipotle peppers in adobo sauce, and chop up a pepper or 2 and add it, microwave it for 2 minutes, stir and cook 1 more minute.

Mix 1 can of Ro*Tel Tomatoes and Green Chilies in about 8 ounces of Velveeta cheese and melt it in the microwave on medium heat. I couldn't find the specific recipe, but you can find it at www.rotel.com.

Melt any cheese you care to choose and then when its good and thick pour over nachos. Then you can add chili, tomatoes, onion, sour cream or avocado, and black olives to top it off. Have fun!
