She probably is actually drinking from her dish but cats like FRESH water. I have a cat that will turn on a faucet to get water if there is even a speck of hair in her water bowl. She absolutely drives me nuts with this. I resorted to in addition to a water bowl buying a large rabbit water bottle. It provides fresh water that is not standing in a bowl and she loves it.
As long as you are having to change out of the litter box because she is urinating don't worry about it...

Check the toilet. Is there any water dripping any where? My daughters cats only drink in the sink so she has a little bowl in there for them to get a drink when she is not home.

Close your bathroom door so kitty cant get into the toilet,make sure you don't have any dirty dishes in the sink where she can get a sip, fill here water dish to the top before going to work.
If the water dish level has dropped she is drinking from it, If not guess she isn't drinking anything at all till you get home.

Cats like to drink out of the toilet and bathtub water is cooler than the water in their bowls. Close the toilet and put a few ice cubes in her water before you leave.
If your cat likes to drink from running water, there are water fountain bowls that also filter the water. Check out some pet supply stores. My cats love theirs.

Well my cats Thunder and Rain I will walk into my bathroom and find them sitting on the toilet bowl thinking from the toilet. But you got to be careful with that because once my cousin came over and never flushed and my cat got sick from that so make sure you always flush lol.

I would guess that Mitty is slipping out to the local Pub while you are off to work. Come home early one day and see if you can catch her.

She's drinking from the toilet...hope she doesn't fall in!! :-P
One thing to try--one of those self-feeders, but for water...that way Mitty has a steady supply of fresh non-toilet H2O. :)
