Habanero Hot Sauce - Liquid Fire
INGREDIENTS:
12 habanero peppers, seeded and chopped
1 (15.5 ounce) can sliced peaches in heavy syrup
1/2 cup dark molasses
1/2 cup yellow mustard
1/2 cup light brown sugar
1 cup distilled white vinegar
2 tablespoons salt
2 tablespoons paprika
1 tablespoon black pepper
1 tablespoon ground cumin
1/2 teaspoon ground coriander
1/2 teaspoon ground ginger
1/2 teaspoon ground allspice

DIRECTIONS:
Place the peppers, peaches, molasses, mustard, brown sugar, and vinegar into the container of a food processor or blender. Measure in the salt, paprika, pepper, cumin, coriander, ginger and allspice. Blend until liquefied. Pour into clean jars, and refrigerate overnight before using.

red hot sauce
12 dried red chile de arbol peppers
1 sm can of tomato sauce
1/2 C water
1/4 of an onion
1 clove garlic
salt to taste
In a small skillet heat peppers for 7 minutes on medium heat
In blender toss all ingredients mix well.
Salsa Verde (green hot sauce)
5 tomatillos (small green tomato looking things usually by the jalapenos in produce section)
4 jalapenos
1/4 of an onion
1 clove garlic
1 avocado (peeled and seeded)
cilantro
salt to taste
in medium sauce pan boil tomatillo and jalapeno for about 10 minutes. use slotted spoon and take out tomatillo and jalapeno.
place tomatillo in blender. chop tops off jalapeno and put in blender pulse until liquefied. Add all other ingredients blend well
pour into bowl and enjoy.

if you're looking for an easy, good salsa, here goes.
two medium tomatoes or 1 can of tomato sauce, 3 or 4 garlic cloves, 3 or 4 jalapeno peppers. cut ingredients into blender size and puree in a blender, add salt to taste and enjoy.

choose a chili, seed it, boil it in a small amount of water, puree the heck out of it in a blender, add cider vinegar and salt and you have a basic hot sauce. stay away from most green chilis as they are usualy just the unripe forms of a colored chili, pick a bright colored ripe subject. maybe start with a nice red fresno chili?

Get dried, aged hot peppers such as chiles, or red peppers. Cook them up in vinegar and water and simmer the mixture with seasonings, then strain. BAM, hot sauce.

HOMEMADE HOT SAUCE
2 (16 oz.) cans stewed tomatoes
1 (16 oz.) can tomato sauce
3-4 jalapeno peppers (Jimenez)
1 tbsp. garlic salt
1 tbsp. onion salt
1 tbsp. salt & pepper
Blend in blender for a few seconds.
