How about telling her that she was right?
It isn't specifically admitting defeat, but it would get the job done and open the conversation for you to actually say the thing that you want to say. Which is that you are sorry.

Saying sorry is hard for everyone. We all like to be right.

What you have to do is just kind of close your eyes and take a deep breath and then say "Mom, I love you and I'm sorry". It 's over so fast and it makes such a tremendous difference in your relationship, it's worth every agonizing moment.

PLUS - the next time you need to apologize to someone, it won't be nearly as difficult.

Courage is just fear with wings
Feel the fear and do it anyway.

It may be hard, but it's necessary. Unless you want to carry around guilt feelings you should just spit it out with sincerity! YOU CAN DO IT! Heavens forbids that something awful happens to her in the next few minutes or so. I'm sure you'll say it to a friend that you want to keep, so your parents are much more important! To be honest with you, there is no easy way. Give God a prayer. It doesn't have to be long - just a 3 sec. 'please help me with this' is suffient for Him. He will help you. And it is important to say your sorry. You'd want others to say it to you, if they did something. It will make you feel better too. Hard feelings between you and your mom make for hard times. You need to be close to her. You will need her so much in life. Trust me.

as you walk by her just say I'm sorry. Words are better than flowers and after you say it the first time, it does get easier. Trust me, I have been saying "I'm sorry" for a very long time now. It is much easier for guys because we are almost always wrong.
Trying saying "I was wrong." That might be easier.....

Suck it up. Show your mom some respect and say it with your mouth. Let the PRIDE go for a moment's time. You can always pick it back up when your done saying, "Mom I'm sorry." She has already seen you at your worst, I'm sure.

Show her instead,wash the dishes do the laundry,anything around the house to lighten her load,she will get a break and you will say your sorry without speaking a word.God Bless.

tell her that she needs to brace herself..your speaking honestly and really felt you needed to apologize for whatever. An apology from your child is golden to any mother, dont worry how you say it..just speak your heart. Dont let it being hard,make you just let it go without saying it....I know it will mean so much to your mom.
