INGREDIENTS:
2 1/4 cups self-rising flour
3/4 cup shortening
1 cup milk

DIRECTIONS:
Combine and mix ingredients together. Pour out on floured waxed paper. Pat the dough out with your hands until dough is not sticky (add a little flour if necessary). Fold double. Cut biscuits with a biscuit cutter.
Bake on a cookie sheet at 425 degrees F (220 degrees C) for 20-25 minutes.

1 tablespoon sugar
1 1/2 cups heavy whipping cream
Preheat oven to 500 degrees F.
In a medium bowl, stir together the flour, sugar, and cream until the dough forms a ball. Turn the dough out onto a surface dusted with additional flour. Fold the dough in 1/2 and knead 5 to 7 times, adding just enough flour to keep dough from sticking to your hands. Gently roll out dough to 1/2-inch thickness. Using a 3-inch biscuit cutter coated with flour, cut dough into biscuits. Place on baking sheet coated with cooking spray, leaving at least 1-inch between each biscuit. Bake for 10 minutes, or until golden brown.

CRUNCHY BISCUITS:
180 g(6 oz) plain flour
1 pinch Baking Powwder
120 g(4.5 oz) salted butter(at room temp),cubed + 20g for greasin the bakin sheet.
60 g(2oz) caster sugar
1 egg
1 tsp vanilla essence
1 pinch of salt
Sift the flour and baking powder into a large bowl.
Tip the contents out on your work surface and make a well in the flour.Fill the hollow with butter and sugar and mix together with your finger tips till mixture resembles breadcrumbs.
Again make a well and pour in egg and vanilla essence, add salt and mix well.
Roll into a ball wrap it in clingfilm and keep in fridge for 2 hrs.
Preheat oven to 180 degrees C(350 degrees F),Gas mark 4.
Greas the baking sheet, roll out the pastry on floured surface,cut shapes as u wishand put on the baking sheet.
Cook for 6-8 min till biscuits are golden brown.Take out from oven and let cool.
These will be for few days in a ir tight container..

150 g (5 oz) caster sugar
150 g (5 oz) soft tub margarine<
few drops of vanilla flavouring
grated rind of 1 lemon
1 egg, beaten
225 g (8 oz) plain flour
Lightly grease two baking sheets.
Cream together the sugar and margarine until pale and fluffy. Beat in the vanilla flavouring, lemon rind and egg.
Stir in the flour and mix to a firm paste. Knead lightly, wrap and chill in the refrigerator for 30 minutes.
Roll the dough to a sausage shape about 5 cm (2 inches) in diameter and 20 cm (8 inches) long. Wrap in greaseproof paper. Refrigerate for at least 30 minutes.
When required, cut off 5 mm ('~ inch) slices, place on the baking sheets and bake at 190°C (375°F) mark 5 for 12-15 minutes. Cool the biscuits on a wire rack.
VARIATION
Honey Jumbles Follow the basic recipe above as far as the end of stage 4. Slice off 5 mm (1. inch) rounds. Roll into pencil-thin strips 10 cm (4 inches) long. Twist into 'S' shapes and place on lightly greased baking sheets. Chill for 30 minutes. Bake as above. While still warm, glaze with thin honey, sprinkle with demerara sugar and grill for 1-2 minutes until caramelised. Cool.

BEER BISCUITS
Ingredients:
3 cups biscuit mix
¼ teaspoon salt
1 teaspoon sugar
1½ cups beer
Methods:
Mix all ingredients and spoon into 12 greased muffin cups. Bake 15 minutes at 425 degrees.
7-UP BISCUITS
Ingredients:
¼ cup 7-Up
¼ cup buttermilk
2 cups biscuit mix
2 tablespoons melted butter
Methods:
Mix first three ingredients and knead until smooth and elastic. Place on floured board and spread dough gently until 1-inch thick. Cut into biscuits and place on greased 9-inch baking pan. Brush tops with melted butter. Bake 20 minutes at 450 degrees. Cool slightly before serving.
YAMMY BISCUITS
Ingredients:
2¾ (two and three-fourth) cups biscuit mix (retain 1/4 cup to flour board)
1 can (17-ounce) Yams in Syrup (mashed, do not drain)
¼ cup melted butter
Methods:
Place biscuit mix in large bowl and cut yams and butter into it. Mix well, knead on floured board until dough is not sticky. (Knead in additional biscuit mix, if neccessary.) Pat out to 1/2-inch thickness and cut into biscuits. Bake 12 to 15 minutes at 400 degrees.
Serving Idea - Appetizers served individually on toothpicks and be stuck into a grapefruit for an easy attractive way to serve.
