I eat A LOT of chicken and I maranade chicken because I don't want to spend a lot of time on it so I don't like having to make my maranades. My favorites are
Left over basic margarita mix with tequila, marinate peices in a baggie for at least 45 minutes, longer depending on how much flavor you want.
Take a whole chicken and put the open cavety over a can of beer, keep the beer upright and put the chicken in the oven. Not much of a maranade, but it gives good flavor and keeps the chicken moist.
Italian dressing
Im pretty much a fan of any alcohol, Rum, Bourbon, Whiskey, anything I have left over from a night with friends.
Jack Daniels makesa great line of pre made marinades
Yeah, so now that I look like an alcoholic! LOL Good luck! & Enjoy!

tenderize the meat with a fork, boneless breast is best. Soak for 1/2 hour in an equal mix of rice wine vinegar, (Kikoman is best,) Then season with lemon pepper and bake 30 - 40 min. at 350 deg. Best served with baked potatoes and a medium sweet white Wine. My favorite is called Diamond, made by the Eagle Crest Vinyards in Western NY.
