There are no eggs in this chocolate wacky cake,
and mixing is easy.

1 1/2 cups all-purpose white flour
1 cup sugar
3 tablespoons unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1 teaspoon vinegar
5 tablespoons olive oil
1 cup cold water

PREPARATION:
In a large mixing bowl, mix flour, sugar, cocoa, soda and salt. Make three wells in the flour mixture. In one put vanilla; in another the vinegar, and in the third the oil. Pour the cold water over the mixture and stir until moistened.

Pour into 8 x 8-inch pan. Bake at 350°F. oven for 25 to 30 minutes, or until it springs back when touched lightly.

If you are new to baking and it does not work out try changing the temperature up 10 or down 10 next time

1/3 cup cooking oil

Wacky cake is supposed to be for the "veggie-folk" and I looked and looked and the only recipe I could find includes sugar, or you can substitute with 'low' sugar.

Mix dry ingredients in 9 x 9-inch pan. Make 3 holes; pour oil, vinegar and vanilla in separate holes. Pour water over all. Mix well with fork or hand mixer. Do not beat. Bake at 350 degrees for 30 minutes. Leave in pan and frost (with chocolate fudge icing) while still warm.

well, john, I'm glad you asked. and that's right, there's no sugar in it.
first, ye get about 6 cups of flour, put it in a bowl, and add cornbread muffin mix. then, as you add a cup of coffee and sixty-one eggs, ye blend it with a high-powered mixer. then, ye set it on fire and throw it at someone. isn't that wacky?
