Here's a Salmon casserole recipe that goes well as a main or side dish:
Salmon Zucchini Bake
1 can (7 3/4 oz) salmon
1 1/2 lb. zucchini (about 4 medium)
1 clove garlic
2 Tbsp. butter
3/4 cup grated sharp cheddar cheese
1/4 cup grated parmesan cheese
1 cup dairy sour cream
1/2 tsp. salt
1/8 tsp. pepper
1/4 tsp. mixed italian herbs
1/2 cup buttered bread crumbs (see below)
Drain salmon and break into chunks with fork. Slice zucchini 1/4" thick. Saute zucchini and garlic briefly in butter. Add salmon, cheddar and parmesan cheeses, sour cream and seasonings.
Turn into casserole dish and top with buttered bread crumbs. Bake at 375 degrees for 20 minutes.
Buttered bread crumbs:
Melt 2 Tbsp. butter and mix into bread crumbs

Take 1 zucchini, 1 yellow pepper, 1 green pepper, about 5 or 6 tomatoes. Some minced garlic, some dried Oregano herb and Marjoram herb, some grating cheese. Salt and pepper to taste. Put some oil and butter in a frying pan, heat the pan on medium. Slice into thin slices the yellow and green pepper and add to the frying pan, turning to coat in butter and oil. While those are cooking over low heat and wilting, slice zucchini and add to the peppers. Continue cooking over medium heat. Add minced garlic at this time. After the peppers seem to have wilted pretty good, add chopped up fresh tomatoes. Toss in your herbs, about a tablespoon of Marjoram and half that amount of Oregano. Cook everything until it's tender. Turn off heat and stir into the pan grating cheese to taste. Add salt and pepper to your taste. Enjoy! This side vegetable dish is colorful, tastes great and goes with lots of dishes and all fish dishes. It is also good, hot or cold.
