The flying that they do in those movies is an exaggeration of the truth. There is a type of training that used to be done called "light-body" training, that starts when you're very young, like 3-4 years old. There are many things they do, but one of the main things they focused on was keeping the spinal column soft.
Most land mammals can't jump out of the water, like fish do, mostly because the spine has become hard/rigid. At the same time some snakes can strike more than half they body length, because of their flexible body and a firm base.
When people with this training would jump, they would "spring" with their legs and their spine giving them 2-3 times the height and 3-4 times the distance of the people without the training, that could only jump with their legs.
Even doing this, couldn't make you "fly". But, not unlike some monkeys and flying squirrels, if you simply bound, glide, and jump from point to point, through the woods/forest/jungle, going from object to object, it does give the appearance of "flying".
And YES, of course this could be done, very easily, through the city, running across roof tops, jumping an occasional alley way, and scaling larger buildings to "fly" from.
But, what goes up, most come down too. Long story short, like Buzz Lightyear said "It's not flying, it's falling with style"

I LOVE Kung Fu movies!! I thought Crouching Tiger, Hidden Dragon was a little over-done with the flying around. I do know that those Shaolin Masters can do some amazing things, things that you or I couldn't, but gravity dictates that you can only jump so far and so high. But they have to create those effects for movies, to somehow make them more interesting. I really think they would be just as good without them though.

I think SHONUF answered your question best.
I just wanted to say to juelz s that kung fu is not "a piece of crap". In fact, Korean martial arts as well as Japanese were all influenced by the ancient art of Chinese kung fu. Please give credit where it is deserved.
Anyway, no one can fly. With regards to kung fu, there are certain moves that may cause one to appear to fly. :)

Alot of those movies were made in that manner because of very old legends about masters that could jump high and long distances. Don't know what truth there is to those legends but as you can see, those are just movie tricks for entertainment. They do those stunts in honor of those ancient masters.
