Jesus didn't say any of the three phrases, simply because he wasn't crucified from the first place.

The only way you could figure that out is if you can speak, read, know witch meaning they were speaking, and can completely translate Greek. The real bible was written in Greek and Greek is a very difficult language to learn. It is harder than learning Chinese and they have 39 vowels and about 5 ways to pronounce each of them so unless you are an expert in the Greek language there is no way to know for sure, and even if that is so you do not know how they said it or if when it was recorded someone miss spelled something. So no one will ever really know but you can make a pretty good estimated guess if you speak and read Greek
