This is "Polly-O" Italian part-skim ricotta cheese from Whole Foods. The date on it said April 29, 2006.

Is it ok to eat it raw with fruit?
Is it ok to eat it cooked in the oven for about a half hour?
Is it ok to eat it at all, cooked or uncooked?

With a true ricotta I would say yes, but American ricotta cheeses are different than Italian.

Ricotta translated means "re cooked" because it is made from a bi product of other cheese making. The whey from cheese making is recooked forming another curd, which is ricotta. This type would be okay to eat if it smelled okay.

American ricotta is made (normally in mass produced amounts) by introducing an acid or culture to whole or skim milk until a small curd forms. this is the one you don't want to eat past the expiration.

If you post with a question I'll give you quick recipe to make fresh ricotta on your stove top. All you need is 1 gallon of milk and 1 quart of buttermilk and it makes the best I've tasted since Italy.

I'd say if it looks fine, smells fine, and tastes fine, then it's... well fine. :o)
If you aren't sure whether it smells right and/or tastes right then I'd say 'If in doubt, throw it out.'
Once opened it probably wouldn't last more than 5 days.

It is not okay to eat at after the expiration date. Cooked or not cooked, discard.

no don't eat it cause the milk i it spoiled so u might get sick
