IN the restaurant biz they only let you keep perishable food 7 days from the day it was made but the whole idea of fresh salsa is to be fresh. Any longer that a day or two and the acids tend to break down the ingredients and it losses its fresh look and taste.

If prepared properly (canned in glass mason jars) and sealed, salsa doesnt need to be refridgerated at all, until it's opened of course. Normal shelf life after it's been opened is approx 6 to 8 weeks.

It's never lasted long enough at my house for me to find out. But from everything I've read, you need to be very careful with salsa because if it's not refrigerated properly, it can cause E. coli infections. The wikipedia entry didn't specify how long it can be refrigerated.

It depends on how fresh the ingredients are. If your tomatoes are at deaths door - well....you get the idea.
I try to use the freshest ingredient - then you can get almost a week. It usually doesn't last that long.
