take a whole chicken, or chicken breasts (skin side up), with about 1/2 lb of carrots, 2-3 stalks celery (or use celery flakes), and 2 onions. Add water and bring to a boil for a few minutes. Lower the heat to a simmer, cook for 2-3 hours, serve with rice, noodles, whatever.

Yes. 1 or 2 chicken breasts on each pan. Use a frying pan, put it on medium and let the pan warm up for 3-4 minutes. Then, add 2-3 tablespoons of olive oil and spread around the pan. Add the chicken breasts, either frozen or thawed. When the chicken is thawed, puncture both sides with a fork. Add, basil, oregano, black pepper, and garlic powder (or a teaspoon of minced garlic, or one clove of garlic) on both sides while cooking in pan. Cook until pinkness is gone. The chicken will be a little brown on the surface. Cook on medium heat.

Preparation: Add basil, oregano, and black pepper until the breast(s) is/are reasonably covered or garnished (or, a quarter level teaspoon for each spice each side). If using garlic powder, sprinkle a small amount on each side of the breast(s), unless you like a lot of garlic. Puncturing the breasts will allow olive oil to enter the center of the chicken, which makes it juicy and very tender.

And, this dish is very healthy and guilt-free.

1 10-3/4 oz (301 grm). can cream of chicken soup
1 stack Ritz or Townhouse crackers, crushed (about 25 crackers)

If you can't find Ritz or Townhouse, any butter-flavor cracker will do. You can also substitute any "cream of" soup that you like. Serve with a garden salad.

Buy a pound or two of boneless skinless chicken breast....head to the local Asian market or an upscale market and pick up one packet of Lee Kum Kee's black pepper sauce (per lbs. of chicken) and throw it in a wok with some sliced fresh red and yellow bell peppers. Easy and yummy!
