Margarine will seperate into oil and that yellow gunk that gives it color if you leave it out. Real butter is fine left in a butter dish for a few days, but will eventually go bad as any food other than twinkies will do. If you use it regularly, don't worry about it.

On the contrary, it is not safe to store butter on your table. Keep in mind that butter contains fat and milk products and to prevent rancid tastes and spoilage, you need to treat it as though you would treat milk. Storing butter properly, lengthens the shelf life so it can be used over a longer period of time. To prevent a type of spoilage called rancidity, protect butter from heat, light and air by storing it covered in the refrigerator. It is best to keep the butter wrapped in its own package and covered (butter dish) and cut and rewrap as you need. (Actually, the same with eggs. It's best to keep eggs in their carton)

My grandmother always did and I thought yuck. I always told her no thanks on the butter thing. I think it should be refrigerated. It is dairy. It does go bad after a couple of days. So you better be eating a lot of butter. Use Smart Balance...its healthier and its good

Leave it out, just know that the warmer it gets, the softer it is -- and on hot days you will have liquid.
