I am marinating tri tip in beer, teriyaki, onions, and garlic. However I think I am missing something. Can you suggest some seasonings that I can add.

Pulehu Tri-Tip Steak
Here's a recipe I got when I went ot Hawaii - tri-tip steak is one of the newer cuts of beef, and is pretty tender.
2 1/2 lbs tri-tip steak (or other tender steak)
1/2 cup sea salt
1 tablespoon crushed garlic
1/2 tablespoon cracked peppercorns
1 tablespoon sugar
4-6 servings

40 minutes 30 mins prep

1. Combine spices and rub into meat.
2. Let sit for 30 minutes.
3. Broil or grill the steaks, turning every 4 minutes.



***** I made this using about 6 oz. of tri-tip and about 1 tsp. each salt, sugar and coursely ground black pepper, with a couple of good shakes of garlic powder. LONDON BROIL
Servings: 8 (5 1/2 oz. each)

4 lbs (2 large) flank steaks
FOR THE MARINADE (makes about 5 1/2 cups):
16 oz (2 cups) salad oil
8 oz (1 cup) soy sauce
8 oz (1 cup) Worcestershire sauce
1 cup brown sugar
1/2 cup sesame seeds
1 tsp garlic powder
1 tsp. ground ginger
1/4 tsp dry mustard

MARINADE INSTRUCTIONS:
Combine all ingredients for marinade; blend together well. Place flank steak into marinade. Use small enough container to allow flank steak to be completely covered by marinade. Marinade 24 hours minimum and not more than 4 days or flavor of the meat will be overpowered by marinade

COOKING INSTRUCTIONS:
Preheat grill to 360 degrees F for 1/2 hour.

Drain marinade from meat. Reserve marinade up to two weeks if needed.

Grill flank steak to medium rare. This will take approximately 10 minutes cooking time total. Hold cooked flank steak in warmer if necessary.

Transfer the steak to a cutting board and let rest for 5 minutes.

Slice cooked flank steak at 30 degree angle 1/8-inch thick slices: This is essential to keep flank steak tender.

Yes... some soy sauce with chives. You might want to wait with the teriyaki unitl the last five minutes of cooking. It will carmelize with the heat.

NO marinating tri tips.
tri a nice DRY RUB
we use PAPPYS SEASONING HERE, and cook it SLOW
the slower the better, hell I even sometimes put em in the smoker, Best tasting meat ever.

I would add a little sea salt, and fresh ground black pepper. You seem like you are going for an oriential style marinade so I would add some fresh ginger (powdered if you don't have any fresh) Hope this helps! : )

It should b o.k. if it's refrigerated, beer breaks down the toughness of the meat. next time try red wine, garlic, and a little olive oil and spices of ur choice. always barbecue tri-tip over charcoal if u can. go 4 it!

It's really a matter of taste. Marinade is one of those things that's really hard to screw up.

You could try adding some pineapple.
