She should have a heath care proxy (so she can legally request medical treatment in case of emergency). It's simple to obtain- first write out in detail who the person is and what treatments she can request (emergency surgery, antibiotics...my son's reads 'any and all necessary emergency medical procedures') then with the sitter go to your bank and have your and her signatures notarized. Don't forget to list all contact information on the proxy.

I always wrote a paper for my caregivers with their name, my kids names, all medical info. I wrote that I gave them permission to take the children to whatever hosp. Anything you can think of, write it down. Then I signed it and dated it. I gave the date of my departure and return. That should be sufficient.
