breakfast would be pancakes/french toast, oatmeal or scrambled eggs. lunch would be mac and cheese and applesauce. dinner would be mashed potatoes, cooked carrots and pudding.

Actually your choices are pretty wide open as long as the items are soft and 'gummable'. Try these:
ramen noodles, soft scrambled eggs, french toast softened with butter, any soft canned fruit (peaches, pears, pineapple), mashed potatoes (and gravy if he likes it), any soft fresh fruit (orange, banana, strawberry) or frozen fruit and/ or berries.

You have to remember that, even though he is only one year old he still has his gums that he can use. These foods will also help when he begins teething. Don't be afraid to try something new as long as it is not going to be too much of a mouthful, won't break into small pieces (choking hazard) and it is semi-soft.

My daughter liked eggs when she was 1. Toast is OK too. Does he have ANY teeth? If he doesn't, I would stick to the 3rd stage baby food. Mashed potatoes were a hit, maybe rice? Diced canned pears are soft. Maybe he could "gum" a precooked meatball? Good luck, I can see why you need ideas! This is tough! Ask the DR. why he doesn't have any teeth, he may need help breaking them through the gums.

Celery is good too. It has "negative" calories; It takes more calories to eat it than it has to offer. I would recommend not eating foods with a lot of carbohydrates at night. Carbs are for breakfast, and if you have them at night, they will get stored as you sleep. Also, try going for jogs in the morning. It'll speed up your metabolism for the rest of the day.

Any root veg, steamed & mashed (the nippers seem to love the sweetness!)
Also anyfood you make for yourself, leave out the salt and mush away! Spaggetti Bolanesse/any pasta (no rich creamy sauces though)
Don't worry about garlic or spices, in my experence they let you know if they're into them or not.
Strawberries they'll stuff into themselves. Batons of cucumber.
(keep these in the fridge when he's teething)
They like to do it themselves and get messy!
