In 1, the first "you" is redundant. Number 2 is better, but I would correct it to: If, one day, you find out that you can't do what you want for a living, what (then) will you do? (You could add the the "then" optionally for readability).

IN THE FIRST SENTENCE PUT A COMMA AFTER DAY
THEN IT IS OK
SECOND ONE IS PRECIOUSLY RIGHT.

I prefer the second, but with adverbial expressions like 'one day', you really have a lot of flexibility. My favourite would probably be 'If you find out one day that...'

Without the comma in place in the first, the second is proper, however if you add the comma after 'if' in the first it will be also.
