I have become enamored with the concept of monochrome weddings with subtle accents.
I am a big fan of Casablanca Lilies and white roses on white table cloths with silver accents like candles (even better white pillar candles with silver ribbon on them for evening weddings) and light sprinkling of silver confetti. I am a big fan of casablancas because they are large, dramatic, and smell delicious. White on white is my first choice for holiday events and winter weddings. This option is certainly a deluxe option, so you may want to put more white roses than casablancas in each arrangement to save money.
Another option is to have white Poinsettias which tend to be more cream colored and you can have cream colored table cloths and gold accents or sprigs of red berries.
Another option is miniature calla lillies. They are quite elegant and come in various shades.
You can also get white miniature rose plants in silver pots.
You can also have a red and silver wedding with red roses and other red flowers with a matching red tablecloth.

get a bundt pan and fill it part way with water. add some cranberries, small pinecones and holly leaves. put it in the freezer. get some clear glass bowls and once the water in the freezer becomes ice, put the ice ring in the bowls. in the center of the ring, light a floating candle. you can also make an ice ring for a punch bowl, using mint leaves instead of holly leaves and cinnamon sticks, instead of pinecones.

Try using the battery operated tea lights(these batteries included last 17 hrs,I think).Thay are wonderful and you can purchase at Bed Bath & Beyond.I used these at my Son's rehearsal dinner,Everyone was amazed,and they also have the candles which are battery operated{and they actually have wax around these candle pillars!}.No mess afterwards in your glass candle holders(tea lights),or bases of candles(pillars)....They are so real..my son picked up the votive w/tea light inside,turned it upside-down onto his hand and faked a bad burn(this was to impress the "bridesmaids" at his table)..they were scared..

glass bowls filled with water, put a dash of red food coloring in the water and place some floating candles in them...they make really pretty ones for the holiday season...i'd like to use a dash of blue food coloring and then float white/glittery snowflake floating candles...around that place several white taper candles....place it all on a mirrored base..it would be beautiful.

oh my gosh....i have the perfect thing....i just made this for my wedding, but since mine is in august, i dont think it'll work for me. maybe it will for you. I got a vase with decorative gems at the bottom and spray painted three tree branches and it looks so "winter wonderland." here is a picture:
