keep it simple..pack sandwich fixins so she can make her own sandwiches there. If you pre-make them, you run the risk of putting something on them that she doesn't like or can't eat
is she health conscious? Avoid potato chips if she is, but go with the baked kind.
bottled water is a healthy thing to drink, but it may offend your masculinity in front of her... pop /beer/wine if the occasion calls for it.
Also a good sandwich bag of trail mix made of nuts- M+Ms, raisins, cashews,almonds,walnuts (best thing about this is that it is optional and light weight)
If the situation permits it, take food that can be cooked on a grill (getting back to that health thing, try to have an idea as to what she likes-hot dogs-hamburgers- etc. This can get cumbersome in materials that need to be carried (cooler, buns, ketchup, mustard, onions, cheese, etc)
depending on where the picnic spot is, the grilled food may or may not be a good idea.
An imperative thing about any picnic involving a date is this:
don't bring enough things to the point that she has to help carry them. If she feels she HAS to work, then she will do it just to be polite, all the while she is thinking "I'm never seeing this guy again..I had to work"
but..if she VOLUNTEERS to carry something, by all means accept, but don't pin her with the heaviest thing.

Be sure to bring some quality beer, stop off at a good deli and pick up some sandwiches...then head over to the market for some fruit (grapes or strawberries will do) and potato chips.

Crackers.
A bottle of wine? If you're old enough. (corkscrew)
Water, cups, napkins.

never buy...always make something....like egg salad with mayo, water chestnuts, black olives on sourdough toasted with a slight bit of mustard. a side of veggie chips and small flask of white zinfindel...
