There's traditional meads made the traditional way (made only with tools available hundreds of years ago...) and traditional meads made with modern conveniences.

Some of the oldest detailed recipies come from Kenelme Digbie, written down in 1669. See the references for a URL. Many of these recipes use an egg floated in the must to measure specific gravity. Unsanitary!

A more modern traditional mead, and one that's highly recommended for beginners as well, is the Ancient Orange Cinnamon and Clove mead. It makes a great, smooth drink with some kick, and is almost foolproof as long as the recipe is followed. The references have a URL for this recipe as well.

This was my first batch, as documented in the archives of the third URL below.
