Grilled Mozzarella & Roasted Red Pepper Sandwich
Makes 1 sandwich

Ingredients
1 tablespoon reduced-fat olive oil vinaigrette or prepared reduced-fat Italian salad dressing
2 slices (1 ounce each) Italian-style sandwich bread
Fresh basil leaves (optional)
1/3 cup roasted red peppers, rinsed, drained and patted dry
2 slices (1 ounce each) part-skim mozzarella or reduced-fat Swiss cheese
Nonstick olive oil cooking spray





1. Brush dressing on 1 side of 1 bread slice; top with basil, if desired, peppers, cheese and remaining bread slice. Lightly spray both sides of sandwich with cooking spray.

2. Place large nonstick skillet over medium heat until hot. Add sandwich; cook 4 to 5 minutes per side or until cheese melts and sandwich is golden brown.

Always use real butter when "grilling" it on a pan, slices of a good sweet tomato with the melted cheese tastes pretty damn good too. Try a different cheese, like munster. Or just dip your grilled cheese in a bowl of creamy tomato soup each time before you take a bite. Very many yummy possibilities.

get pepper jack cheese from your local supermarket. Shred the cheese and make grilled cheese sandwiches from that - SPICY* Also you can add a few very thin slices of soprasat to that.

I never find grilled cheese boring but, for a change add one or more of these items before grilling:
sliced tomatoes
ham
sliced onion

I prefer mine plain with tomato soup...there just isn't anything like it!

It's all in what u add! I like to melt it w/leftover bacon from breakfast. The wife she likes sun dried tomatoes melted in. Salami is a good one, and ham turkey combo I believe is a (Monte cristo), Want some zing put some jalapeno slices and use pepper-jack cheese! THe sky's the limit.

Grilled cheese with swiss, tomato, and onion is awesome and regular grilled cheese with american cheese is the best when you break it up and put it in campbells tomato soup. YUM

I use several varieties of cheese on the sandwich. Also you can dip the whole thing in a beaten egg before you fry it for a different texture. Also add bacon, onion, salsa etc.

I was going to write my grilled cheese recipe (add basil, garlic, and sundried tomatoes), but I changed my mind when I read someone else's answer: yeah, serve it with tomato soup. Love that ****.

Grilled ham and swiss cheese.

Grilled pepperoni and mozzerella cheese.

Use cheddar cheese, american cheese and cream cheese.

Grilled roast beef with provolone.

Grilled salami, ham and provolone.
