Do you determine the amount of eggs used,based on
flavour or the thickness of the custard.

How many eggs would be consided the max.

For a medium custard, proportions should be roughly 3 eggs to 1/3 cup sugar, 1 teaspoon vanilla, 2-1/2 cups milk, dash of salt, dash of nutmeg. If you use more eggs to the same amount of milk, you will get a richer custard. So it's all down to how rich you want it.
