Why does she do this and what can she do to end this cycle? She's seeing a really nice guy right now and it would be a shame to see it all fall apart like with the last 2 guys

The trick to being in love is the need to be together. Let nature take its course.
If your girlfriend still has feelings for her ex-boyfriend, don't suppress those feelings. Once something is suppressed it becomes more potent and stronger. Allow your girlfriend to talk to you as much and as often as she'd like to communicate her feelings. Let those feelings surface and gradually they will lessen.
As long as there was no bodily harm or physical threats to her person, your girlfriend will realize her own ambitions in matters of love and romance by getting out and seeing others in love and sharing. Love is contagious. Once the love bug strikes, it becomes an epidemic to all those around.
And, there is no known cure.
