I am a bachelor and feed me and two other guys, we eat a lot of potatoes, but I'm running out of ideas, I need easy potatoe ideas

This is my personal favorite~big hit at my house

Mashed Potato Cakes

2 cups chilled mashed potatoes (see Note)
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1/2 cup all-purpose flour, for dredging
1 1/2 teaspoons kosher salt
1/4 teaspoon freshly ground black pepper


Divide the mashed potatoes into 8 equal portions. Use your hands to form 1/2-inch thick patties.
Heat the oil with the butter in a large nonstick skillet over medium-high heat until almost smoking. Mix the flour with the salt and pepper in a pie plate. Coat the potato patties in the flour mixture. Add the potato cakes to the pan and reduce the heat to medium-low. Cook until they have formed a golden crust, 15 to 20 minutes. (Peek underneath using a spatula before turning.) Turn and cook the other side until golden brown, about 15 minutes. Season with additional salt and pepper and serve hot.


Italian Potatoes

14 or 15 large red potatoes (about 5 pounds)
Salt and pepper
1/2 cup chopped fresh parsley leaves
1/2 cup chopped green onions
3 large cloves garlic, thinly sliced
1 heaping teaspoon salt
1/2 teaspoon dry mustard
1 scant tablespoon sugar
1 tablespoon Worcestershire sauce
1 cup olive oil
1/2 cup tarragon vinegar



Place potatoes in a large pot and cover with water. Bring to a boil, generously salt the water, and boil the potatoes until tender, approximately 30 to 40 minutes. Drain and let stand until cool enough to handle. Peel potatoes, if desired, and cut into 1-inch chunks. Place cut potatoes in a large bowl. Sprinkle parsley and green onions over potatoes. Make the sauce by mixing the rest of the ingredients together in another bowl; then pour sauce over the potatoes. Stir well. Let stand all day, or at least for 4 hours, stirring every hour. Do not refrigerate. Serve at room temperature.

Potato Casserole

2 cups mashed potatoes
1/2 cup sour cream
Salt
Pepper
Garlic Powder
1 small onion, sliced thin
1 small bell pepper, sliced thin
8 tablespoons (1 stick) butter
1 1/2 cups grated Cheddar
4 medium potatoes, cooked
6 slices bacon, cooked crisp


Preheat oven to 350 degrees F.
Spread mashed potatoes evenly on bottom of casserole dish. Layer sour cream evenly over top. Sprinkle spices, to taste. Saute onion and bell pepper in butter; evenly layer over top of sour cream. Slice potatoes and layer over onions and bell peppers. Add butter. Finally top with cheese. Bake for 25 to 30 minutes. Remove from oven and crumble bacon over top.

2/3 cup minced onion
1/3 cup minced green bell pepper
1/3 to 1/2 cup olive or canola oil
4 Idaho potatoes, peeled and diced
Salt and freshly ground pepper
In a large skillet cook the onion,and green pepper in 2 tablespoons of the oil over moderate heat, stirring occasionally, until vegetables are softened. Transfer vegetables to a bowl. In the skillet heat the remaining oil over moderately high heat until hot and add the potatoes. Saute, stirring occasionally, for 15 to 20 minutes, or until tender and crisp. Stir in the vegetable mixture and correct seasoning. Heat over moderately low heat until hot and serve.

32oz partially thawed frozen hash browns (can use shredded or chunk)
1 onion diced
1 stick melted margarine or butter
16oz sour cream
2 small cans cream of chicken soup
8 oz shredded cheddar cheese
salt and pepper to taste
mix well and spread into a 13x9"pan
top with 4 tablespoons melted margarine or butter and 2 cups crushed corn flakes mixed together
Bake at 350 degrees 45min to 1 hr.
I occasionally add diced leftover ham to this and use 1 lge can of soup instead of 2 small then. bake same amount of time

How about a German potato salad? No mayonnaise! Boil potatoes, cut them into bite-sized pieces, add chives and a little vinaigrette with a dash of dijon mustard, mix and serve warm. Yum!

Have you tried potatoe pancakes or latkes as Jewish people call them?

Peel your potatoes, wash them and shred them, sprinkle them with a teaspoon of lemom juice to keep them from turning black, stir to distribute the lemon juice. Put them in a paper towel and squeeze to take out as much moisture as possible.

Stir in some finly chopped onion, salt and pepper, an egg and a tablespoon of flour. Heat a frying pan with oil and fry the pancakes until golden brown. You can serve them with apple sauce or sour cream. I like them with schnitzel but they are great on their own too.

Another great idea is twice baked potatoes. I make these and then freeze them to have on hand when I have visitors. Bake your potatoes then cut in half and scoop out the potatoe and mash with butter, sour cream, bacon bits and cheddar cheese. Pipe or use a spoon to refill the skins. reheat in the oven. Yum Yum.

Or Boil your potatoes and mash them with salt, pepper, butter, sour cream, sauted onions. Spray ramekins with cooking spray and fill with the potaoe mixture and sprinkle with a mixture of parmesan cheese and bread crumbs. Bake in oven until golden brown on top.

Have you ever tried lazy perogies? Cook lasagne noodels according to package instructions. Boil and mash your potatoes the same way as above but add grated cheddar cheese and bacon bits. Spray a baking pan with cooking spray, layer noodles, then potatoes, noodles, and potatoes to make several layers. Serve with fried onions and bacon bits and a side of sour cream. Again! Yum Yum.

Thought I was done but then I remembered this very simple one. peel and dice potatoes, deep fry like a french fry then sprinkle them with a bit of garlic salt and barbeque seasoning.

my dad boils potatoes and makes a mustard/onion sauce in which he dips the potatoes

boil potatoes and
a] let them cool then add chili, salt and lemon
b] while potatoes are warm put butter, salt and lemon

or

dice potatoes and mix them w/ scrambled eggs

Look in the betty crocker cook book.There are a lot of great ideas for potatoes.You may try making old fashioned tater cakes out of your leftover mashed potatoes.They are good if you do it right.

slice them, add onion, salt, pepper and a bit of garlic, wrap them in foil with about a tsp. of butter and toss them in the oven or on the grill, about 350 for 25 minutes, till tender. ( you can do this with veggies too)

peel and cut potatoes into little cubes. beat eggs, add salt and pepper to taste and set aside. heat your frying pan with cooking oil and fry your potatoes there. add your beaten eggs. fry it. eat it with ketchup and steaming rice.
