It's not mould. It's a chemical in the banana that reacts to the oxygen in the air. Lemon juice, or anything slighly acid should stop this.

I think it is because it dries out when you open it. when you don't peel it, it is closed together with no air getting in so it stays yellow.

the air hits it..just like when you peel an apple and it turns brown..same thing with an avacado...
