Well, because they contain vitamins and minerals which our body needs. Vegetables and most of the fruits dont have cholesterol. Also, fibers from the vegies and fruits help in washing out bacterias and waste in our intestines.

Besides all the sugars and minerals they provide, they provide all the roughage / fiber necessary for our bodies to digest / process our foods. A real good case-in-point is reported in the book "Undaunted Courage" about the Lewis and Clark expedition. The very detailed book by Stephen E. Ambrose, Simon and Schuster publishers, 1996, gives great account of their dietary difficulties since they had all the meats they could possibly want but came down ill, and discovered they had to barter with the Indians in order to get and keep a stock of fresh vegetables in order to regain and maintain their health. It's a great book to read, and very detailed, if you like historical stuff, and it will clearly document what happens when you don't have enough fruit and vegetables. I can also tell you, as a former bicycle racer and long distance rider, I would NEVER go without a healthy diet of fruit and vegetables and expect to have a successful ride of any type, and I've ridden 100 and 200 mile rides, all done in one day, and I've ridden an average of 250-300 miles a week in my regular training, so I can tell you, DON'T EVER EAT WITHOUT VEGETABLES AND OR FRUIT!! This is a question of debate and study for many scientists in the world today. You are what you eat - your cells use the vitamins and minerals they need from the food you eat. Veggies and fruit have what your bones and blood and muscles and everything needs to maintain health and energy. Raw veggies and fruit still have live energy and are best, but freshly cooked are still better than processed with chemicals. They also add fiber to the diet, which absorbs and helps clear toxins out of the system. They are also Very Tasty!

i would recommend adding some nuts for zinc. MYTH: "Vegetarians get little protein." FACT: Plant foods offer abundant protein. Vegetables are around 23% protein on average, beans 28%, grains 13%, and even fruit has 5.5%. For comparison, human breast milk is only 5% (designed for the time in our lives when our protein needs are as high as they'll ever be). The US Recommended Daily Allowance is 8%, and the World Health Organization recommends 4.5% MYTH: "Beans are a good source of protein." FACT: There is no such thing as a special "source of protein" because all foods -- even plants -- have plentiful protein. You might as well say "Food is a good source of protein". In any event, beans (28%) don't average much more protein per calorie than common vegetables (23%). MYTH: "Milk is necessary for strong bones." FACT: McDougall: "Where does a cow or an elephant get the calcium needed to grow its huge bones? From plants, of course. Only plants. … People in Asia and Africa who consume no milk products after they're weaned from their mother's breast grow perfectly healthy skeletons in the normal size for their race. A consistent conclusion published in the scientific literature is clear: Calcium deficiency of dietary origin is unknown in humans. Dairy products contain large amounts of animal proteins. This excess protein removes calcium from the body by way of the kidneys. Knowing the physiological effects on calcium metabolism of eating excess protein explains why societies with the highest intakes of meat and dairy products--the United States, England, Israel, Finland, and Sweden--also show the highest rates of osteoporosis, the disease of bone-thinning."

they give you vitamins. a lot of fruits and vegetables have a lot of water in them. all fruits and vegetables have a different reason for each. if you are low on potassium eat a banana.

They replace essential vitamins and other trace elements. They also produce roughage, which you need.

All vitamins are necessary, the difference between non-essential and essential is that your body cannot produce them on it's own. Intake is the only way to get them!

Both are good for you, each fruit/vegetable has different vitamins. Therefore as more variety, as better. Vegetables have generally less sugar than fruits.
