Just the words BANANA BREAD makes me want to have it!
It's this wonderful, flavorful taste of bananas, sugar, walnuts that will have you wanting more! Light brown in color with a crack at the top of the crust (if it bakes right...) This is one bread that begs for a pat or two of butter. YUMMY! It's the best way in the world to use up very ripe bananas....
All these answers are soooo good! I can only add my 2 cents. Yes. It's considered a quick bread so it can be easy to make, but with any baking, you have to follow the directions exactly.
Banana Bread
Recipe is from the Best Loved Foods of Christmas, Pillsbury, undated booklet (the booklet was from the 1960's and one of the best holiday baking booklet out there!)
INGREDIENTS
2 cups Pillsbury's best all purpose flour*
1 teaspoon soda
1/2 teaspoon salt
1/2 cup butter
1 cup sugar
2 eggs -- unbeaten
1 cup (OVER- RIPE) bananas mashed
1/3 cup milk
1 teaspoon lemon juice or vinegar
1/2 cup Walnuts chopped
DIRECTIONS
Sift together flour, soda, and salt. Cream butter. Gradually add sugar, creaming well. Add eggs and bananas. Blend thoroughly. Combine milk with either lemon juice or vinegar. Add the dry ingredients alternately with the milk, beginning and ending with dry ingredients. Blend well after each addition. With electric mixer use a low speed. Stir in nuts, chopped.
Turn batter into 9 x 5 x 3-inch pan, well-greased on the bottom. Bake in moderate oven (350 degrees) 60 to 70 minutes. (Make sure the oven is pre-heated.)
*Pillsbury's Best Self-Rising Flour is not recommended for use in this recipe.
Please save a piece for me!

Banana bread is a sweet, cakelike bread which contains mashed bananas. Banana bread is a quick bread which typically uses baking soda as the leavening agent instead of yeast. Rather than dough, the bread is baked from thick batter, which does not require kneading. Banana bread is usually baked in a rectangular loaf pan.
