I purchased some wonderful muffins that listed the following ingredients:
bran, water, white grape, whole wheat flour, apples, cranberries, baking soda, cinnamon, and salt.
NO EGGs, NO SUGARs and NO FATs (I do use sugar substitutes sometimes.)
They are sooooo good but expensive.
I'm not sure the amounts of ingredients nor where I would get "white grape" to add to a recipe. Would you mash them? skin them?
I need some help here!!!

No idea where my mom got this recipe [it's quite possible she created it herself], but these muffins are FANTASTIC and have low/no Cholesterol. After my dad had open heart surgery, my mom started cooking healthy foods for him, and I think this was one of her inventions during that time:
Nancy's Fantastic Bran Muffins
Beat 1/2 cup margarine [e.g. Fleishman's lite. I suppose you could use butter, but that would add to the fat.]
Add and beat well:
5 tablespoons [tbls] sugar [it's a small amount, so you could possibly use Splenda, Equal, etc.]
2 tbls molasses
1/3 cup egg beater/egg substitute OR 1 large egg
Measure and mix together:
1 cup oat flour
1/2 cup unbleached flour
2 rounded teaspoons [tsp] Baking Powder
1/2 tsp salt [optional]
1/2 tsp Baking Soda
1 rounded tsp cinnamon
3/4 cup wheat bran
Mix and heat in microwave for approx. 45 seconds:
1 cup skim milk
1 tbls vinegar
Fix milk first and allow 10-15 minutes for it to curdle after microwave.
Add first the flour mixture and then the soured milk quickly to molasses mixture, stirring enough to incorporate all well but not prolonged beating.
Add, if desired:
1/4 cup raisins
[Note: I suppose you could try adding shredded carrots or nuts, but I've never done this.]
Using muffin pan paper cup liners, fill muffin cups 2/3 full. Bake until muffins are slightly browned and set, about 20 minutes in a 425 degree preheated oven. These can be frozen and reheated in the microwave [I often make a double or triple batch and do just that].

Raisin Bran Muffins That Work
I have always been disappointed when I've baked homemade bran muffins, but not anymore. These are moist and flavourful. I think the trick with the moistness is combining the bran with the wet ingredients, as no other bran muffin recipe I've tried had this step. I often cut this recipe in half and bake just 6 in my toaster oven. These freeze well, too.
2 eggs
1 cup 1% low-fat milk
1/2 cup canola oil
1/4 cup molasses
3/4 cup packed brown sugar
1/2 teaspoon vanilla extract
1 1/2 cups wheat bran
1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon salt
1/2 teaspoon baking soda
1 cup raisins or cran raisins (or blueberries, unthawed if frozen)
12 muffins
30 minutes 10 mins prep
Preheat oven to 400F; prepare muffin pans by lining cups with paper muffin liners.
In a large bowl, beat together eggs, milk, oil, molasses, sugar and vanilla.
Stir in bran; let stand for 5 minutes.
In a small mixing bowl, combine flour, baking powder, salt and baking soda; add to egg mixture, stirring just until combined.
Carefully stir in raisins, being careful not to overmix.
Fresh blueberries, or unthawed frozen ones, can be substituted for raisins, by the way.
Spoon into paper-lined muffin cups, filling right to the top.
Bake in preheated oven for approximately 20 minutes, or until muffins are firm to the touch; do not overbake or muffins will be dry and tough.
As mentioned in the description, I like to cut this recipe in half (half of 3/4 cup brown sugar is 1/4 cup+ 2 tbsp) and bake the 6 in my toaster oven; after 20 minutes they are always done to perfection and I don't heat up my kitchen.
Remove muffins from pan and cool on rack

REFRIGERATOR MUFFINS 2 cups Nabisco 100% Bran cereal 2 cups Boiling water 1 cup Crisco 3 cups Sugar 4 Eggs, beaten 4 cups Buttermilk (1 quart) 5 cups Flour 5 tsp Baking soda, sifted (MUST SIFT SODA PER GRANDMA) 4 cups Kellogg’s All Bran cereal 1 tsp Salt 1 cup Raisins, chopped dates, nuts (optional) 1. Mix Nabisco 100% Bran and boiling water, set aside 2. Cream together Crisco, sugar, eggs and buttermilk 3. Add to soaking bran 4. Mix remaining ingredients in separate bowl 5. Add to wet ingredients 6. Batter will keep covered in refrigerator for 6-7 weeks 7. Bake at 375 in greased muffin tins for 20 minutes or until tests done you keep the batter in the fridge and bake as needed. This is my Grandmother's recipe
