The brownie was invented in Chicago in 1893 by the chef of the Palmer House Hotel at the request of Mrs. Bertha Palmer. The ladies attending the Columbian Exposition needed something they could eat with their hands without getting them dirty, you see...
Nobody knows for sure when the term "brownie" was used for the first time. (The first time it was used in print was in a Sears, Roebuck and Co. catalog published in Chicago in 1898.)
The recipe below (which has been slightly adapted and updated from the 1893 original), is still used at the Palmer House Hilton on State Street.
It is one of their more popular desserts. You should get 24 (or more) brownies from it:
INGREDIENTS:
* 1 pound butter
* 1 pound crushed walnuts
* 1 pound semi-sweet chocolate
* 1 pound granulated sugar (3 1/2 cups)
* 1 tablespoon baking powder
* 4 whole eggs
* 8 oz. cake flour (2 cups)
Glaze:
* 1/2 cup apricot preserves
* 1/2 cup water
* 1/2 teaspoon unflavored gelatin
DIRECTIONS:
* Preheat the oven to 300 degrees.
* Melt the chocolate and the butter either in a double boiler or in a bowl set over barely simmering water.
* Mix the baking powder, cake flour, and granulated sugar in a large mixer bowl on low speed for 4 to 5 minutes.
* Add the eggs and mix until blended.
* Pour into a greased 9 x 13 baking sheet and sprinkle with the walnuts, pressing the walnuts down lightly into the mixture with the palm of your hand.
* Bake in the preheated 300 degree oven for 40 minutes.
* After removing from the oven, allow to cool at least 30 minutes.
KNOWING WHEN IT'S DONE:
* You will know when it is done because the edges start to become a little crispy and the brownie will have raised about 1¼ inch.
* When the brownie is properly baked, it will test "gooey" with a toothpick in the middle, due to the richness of the mixture.
TO MAKE GLAZE:
Mix together the apricot preserves, the unflavored gelatin, and the water in a saucepan. Mix thoroughly and bring to a boil for 2 minutes. Use while hot. Spread the glaze in a thin layer over the brownies using a pastry brush.
The brownies are easiest to cut if you can place the whole pan into the freezer for 3 to 4 hours after glazing, then remove and cut with a serrated knife.

Try this great German chocolate cake topping on top of a rich brownie base.
Ingredients:
Recommend this recipe to a friend
Brownies:
1/3 cup butter
3 squares unsweetened chocolate
2/3 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
2 eggs
3/4 cup sugar
1 teaspoon vanilla
Topping:
1/3 cup butter, softened
1/3 cup brown sugar
1/4 cup light cream
1 cup flaked coconut
German Chocolate Brownie
Directions:
Brownies:
Melt butter and chocolate together. Set aside to cool.
In a small bowl, combine flour, baking powder and salt.
In a large bowl beat eggs. Blend in sugar. Add chocolate mixture and vanilla. Stir in flour mixture.
Pour into a greased 8 inch square pan. Bake at 325 degrees F. for 15 to 18 minutes. Cool.
Topping:
Cream butter and sugar together. Stir in cream and coconut.
Spread over the cooled cake. Preheat broiler.
Place brownies under broiler for 1 to 2 minutes, until topping is bubbly. Cool and cut into squares. Store in refrigerator.

kahlua brownies
1/2 cup butter
3 ounces unsweetened baking chocolate
1 1/2 cup sugar
3 eggs
1 1/2 cup all purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1/3 cup Kahlúa®
Heat oven to 350° F (180° C)
Grease an 8 X 8 inch cake pan.
Mix together the flour, baking powder, and salt, and set aside.
In a saucepan over low heat, melt the butter and chocolate, stirring frequently until smooth.
Remove the saucepan from heat, and let cool.
Beat eggs and sugar until light. Mix in cooled chocolate mixture and Kahlúa® flour mixture. Spread in the cake pan and bake for 40 minutes or until a toothpick inserted in the middle comes out clean.
Cool slightly, then brush the top with about 1-2 tablespoons of Kahlúa®.
Cut into squares.
ps. you can vary this recipe by using different liquers like rasberry , or rum

I just made these like an hour ago
in a medium bowl beat 2 eggs until frothy then add 1 cup of sugar 3/4 cup of flour and a pinch of salt. Then mix 1/2 cup of butter with a 1/4 cup of cocoa, melt the butter and cocoa together and pour onto all the other stuff, stir until it is brown and pretty thick, then bake at 350 degrees for half an hour in a 8 x * pan.
it's simple and delicious.

Cappuccino Brownies
INGREDIENTS:
2 pounds semisweet chocolate chips
1/4 cup instant coffee granules
1 cup unsalted butter, softened
2 cups white sugar
8 eggs
3 tablespoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups all-purpose flour

DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Grease and flour four 8x8 inch baking pans.
Place the chocolate chips and the coffee granules in a double boiler over simmering water. Cook over medium heat, stirring occasionally, until melted and smooth. Set aside.
In a large bowl, cream the butter and sugar together until light and fluffy. Beat in the eggs two at a time, mixing well after each addition. Stir in vanilla, cinnamon, and salt, then mix in the melted chocolate. Mix in flour until just blended. Divide the batter equally into the prepared pans, and spread smooth.
Bake for 35 minutes in preheated oven, or until the edges pull from the sides of the pans. Cool on a wire rack. Cover, and refrigerate for 8 hours. Cut the cold brownies into bars to serve.

Preheat oven to 250 degrees F (120 degrees C). Grease an 8x8 inch baking pan.
In a large bowl, cream together the butter, brown sugar, and eggs until light and fluffy. Stir in the unsweetened chocolate and vanilla until well blended. Mix in the flour, and then the walnuts. Spread batter evenly into the prepared pan.
Bake for 1 hour in the preheated oven, or until a toothpick inserted into the center comes out clean. Cool in the pan on a wire rack before cutting into bars.
