Yikes,,, all paint should be two coated no matter the disclaimers. I use Behr almost exclusively, but the formulations are pretty standard in all quality paints.
Never go FLAT,,, and my personal preference anywhere is SATIN. It cleans as well as semi gloss and is as durable.
Paint is formulated in its grades/ designations, with different amounts of pigment, polymers and other agents to aid in cleanup and durability. FLAT, and even eggshell are more porous than SATIN and do not cleanup as well,,,although if you applied a flat over a light enough color with a large enough nap, you might get away with one coat, I don't advise it.

RE:
I painted 2 walls today with Behr eggshell paint in classic taupe..?
I am a bit disappointed. The walls were clean and all repairs taken care of. I used an edger and new rollers to paint. it looks blotchy from the side. Will a second coat hide this or should I go back to a flat sheen?

if you repaired drywall problems, you need to prime BEFORE you paint. spot priming anywhere that you spackled with a latex primer will help, then repaint the wall. the blotchy look that you describe is called flashing, where the eggshell looks different on the spots that you fixed. also, try using better paint. Behr is one of the worst paints on the market

Well, I agree with some of the comments above. If any spots were repaired, they should be primed first, but a second coat of paint should help. Additionally, the flatter the finish, the more it will hide and the better it will cover.
And, by the way, new roller covers stink. If you can, always try to use older ones--they work far better (buy high quality to begin with, and always clean thoroughly). We use our new roller covers to prime first to get them "used."

You probably just need another coat. I have used the same exact brand and finish (although a different color) and I didn't have that problem at all. Also, could it just be the lighting that is making you think it is blotchy?
