1 cup peanut butter
1 cup sugar
1 egg

mix together well. make 1 inch balls and put on cookie sheet flatten with a fork bake at 375* for 8-10 minutes. recipe can be doubled tripled etc.

Chips Galore Cookies
Serving Size : 108

1 cup butter or margarine -- softened
3/4 cup sugar
3/4 cup packed brown sugar
2 eggs
1 tablespoon almond extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups semisweet chocolate chips
1 1/2 cups milk chocolate chips
1 1/2 cups vanilla or white chips
1 1/2 cups chopped pecans
1 1/2 cups chopped walnuts

In a mixing bowl, cream butter and sugars. Add eggs, one at a time,
beating
well after each addition. Beat in almond extract.
Combine flour, baking soda and salt. Gradually add to creamed mixture.
Combine chips and nuts. Stir into dough.
Cover and refrigerate for 1 hour or until easy to handle.
Drop by tablespoonfuls 2\" apart onto greased baking sheets.
Bake at 325º for 18-20 minutes or until golden brown. Remove to wire
racks
to cool.

I had been given years ago a Mrs. Fields Cookie Cookbook, and I treasured it ever since. Here's my favorite:


Creamy Lemon Macadamia Cookies


2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup packed light brown sugar
1/2 cup sugar
1/2 cup butter -- softened
4 ounces cream cheese -- softened
1 large egg
2 teaspoons lemon extract
1 1/2 cups macadamia nuts -- unsalted

Preheat oven to 300 degrees.
In a medium bowl combine flour, baking soda and salt.
In a large bowl blend sugars well with electric mixer set at medium speed.
Add butter and cream cheese and mix to form a smooth paste. Add egg and
lemon extract and beat at medium speed until light and soft.
Add the flour mixture and nuts. Blend at low speed just until combined. Do
Not overmix.
Drop by rounded tablespoons onto ungreased cookie sheets, 2 " apart.
Bake for 23-25 minutes. Immediately transfer to cool flat surface.

Walnut cups or you can use pecans. They are the best cookies but kinda of a pain to make.

1 (3 ounce) package cream cheese
1/2 cup butter
1 cup all-purpose flour

1 egg
1 tablespoon butter
1 teaspoon vanilla extract
1 cup brown sugar
3/4 cup chopped walnuts

DIRECTIONS:
Preheat the oven to 375 degrees F (190 degrees C). Line mini muffin pans with paper liners.
In a medium bowl, stir together the cream cheese, 1/2 cup butter and flour until a dough forms. Roll into 1 inch balls and press them into the bottom and up the sides of the prepared muffin cups.
In a small bowl, blend together the egg, butter, vanilla and brown sugar until smooth. Stir in walnuts. Spoon the mixture into the muffin cups, but do not fill all the way to the top or the mixture will bubble over.
Bake for 15 to 20 minutes in the preheated oven, until the crusts are golden.

This is a new recipe. I love it and my kids loved it as well. I do not put nuts in the recipe but I add about 1 extra cup of oatmeal. Enjoy!

Nean-Marcus Chocolate Chip Cookies
( RECIPE YIELD ABOUT 50 COOKIES )


1 CUP BUTTER
1 CUP WHITE GRANULAR SUGAR
1 CUP BROWN GRANULAR SUGAR
2 EGGS
1 TSP. VANILLA
2 CUPS FLOUR
1/2 TSP. SALT
1 TSP. BAKING SODA
1 TSP. BAKING POWDER
2.5 CUPS BLENDED OATMEAL
12 OZ. CHOCOLATE CHIPS
1 - 8 OZ. HERSHEY CHOCOLATE BAR GRATED
3 CUPS FINE CHOPPED NUTS (Pecans or Walnuts)

MEASURE OATMEAL AND BLEND INTO A FINE POWDER IN FOOD PROCESSOR OR
BLENDER


Cream butter and both sugars together. Add eggs and vanilla. Mix in
flour, oatmeal, salt, baking powder and soda. Add chocolate chips, Hershey bar and chopped nuts. Roll into 1 inch balls and place on a un-greased cookie sheet about 2 inches apart.
Bake in 375 degree F. oven for 10 minutes.

Gooey Butter Cookies

1 box cake mix (any flavor)
1 8oz. cream cheese, soft
1 stick butter, soft
1 tsp. vanilla
powdered sugar

Mix together all ingredients. Roll into small balls and roll into powdered sugar. Bake at 350 for 10-12 minutes.
