BLUEBERRY COFFEE CAFE
Topping:
5 Tablespoons sugar
1 teaspoon cinnamon
2 cups blueberries
Mix above ingredients together and set aside.
Cake:
3 cups flour
2 cups sugar
3 teaspoons baking powder
1 cup oil
1/4 cup orange juice
4 eggs
2 1/2 teaspoons vanilla extract
Beat all cake ingredients together until well blended.
Pour 1/2 of the batter in a greased tube pan.
Sprinkle with 1/2 of the topping mixture. Add the remaining batter. Then the rest of the topping mixture .
Bake at 350 for 1 - 1 1/4 hour.

PINEAPPLE LADY FINGERS DESSERT
3 packages lady fingers
1 package (8 ounces) cream cheese
3/4 cup sugar
1 teaspoon vanilla extract
2 cups crushed pineapple
1 can pineapple pie filling
1 pint whipping cream
1/2 cup walnuts (chopped - optional)
Drain crushed pineapple; and combine with pie filling in large bowl.
In medium bowl, beat cream cheese, sugar and vanilla extract until smooth. Fold this mixture into the pineapple mixture.
Whip cream in another medium bowl until almost stiff and holds peaks.
Fold the whipped cream into the
pineapple-cheese mixture.
Line lady fingers around the sides and bottom of a 9-inch spring form pan.
Pour 1/2 of cream mixture into the springform pan and then top with more lady fingers and the rest of the cream mixture.
Top with chopped nuts. Refrigerate overnight.

i have a fab and deeeelicious recipe: chocolate cheese-cake:
ok so u know how to do the cheese cake right? u can buy from stores everywhere. first u press in the smushed cookies in the pan, then into the fridge. meanwhile you mix the cheese mix. also you'll need some whipped cream (chocolate) and chocolate bars u melt in the microave. so pour in the chocolate with the cream and add exta milk. keep mixing for 10 minutes. then bring out the cookie pan and put on the smushed cookies some ordinary chewy chocolate chips ahoy cookies. pour the mix over it then put in the fridge for 5 hours. after 5 hours bring out the pan and spray some chocolate chips over it or some cherries ....or anything else!! ok i hope u enjoy it! hey im only 17 i make it alone!! Enjoy!

No bake key lime cheesecake
1 tablespoon wheat germ
2 cups plus 1 tablespoon sugar substitute (recommended: Splenda)
16 ounces real cream cheese, room temperature
1 cup sour cream
1 cup whole milk ricotta cheese
3/4 cup Key lime juice (fresh or bottled)
2 tablespoons no sugar added vanilla extract
1/4 cup hot water
2 limes, zested, divided
3 envelopes unflavored gelatin (recommended: Knoxx brand)
3/4 cup boiling water
Special Equipment: 10-inch deep pie plate or cake pan
Sprinkle the wheat germ and 1 tablespoon sugar substitute over the bottom of the pie plate to create a "faux" crust.
In the bowl of an electric mixer, beat the softened cream cheese, sour cream, ricotta cheese, lime juice, 2 cups sugar substitute, vanilla extract, 1/4 cup hot water, and zest of 1 lime on medium speed until well combined.
Using a fork to mix, thoroughly dissolve the 3 envelopes of gelatin in 3/4 cup boiling water. Do not let cool and move onto the next step immediately. (It is important that the water be boiling hot and that you mix the gelatin powder in quickly so it is completely dissolved. If not, you will have gummy bear-type lumps.) With the mixer on high and working very quickly so the gelatin does not set, blend the hot dissolved gelatin thoroughly into cheesecake mixture. Immediately pour mixture into the prepared pie pan and sprinkle with the zest of the other lime. Chill in the refrigerator for about 3 to 4 hours or until firm. Serve.
Hint: If you have any extra cheesecake mixture left over after filling the pie pan (I always do), put it in a pastry bag or heavy-duty plastic bag and put it in your freezer for about 7 to 10 minutes, just to firm it up a bit to the thickness of whipped cream. Then take it out and decorate the top of the Key Lime Cheesecake. (If it is in a plastic bag, snip the corner off.)

here are a couple of my fave recipes out of better homes and gardens cookbook:
Baked Alaska
1 quart ice cream (any flavor)
1 9-inch cake layer (any flavor)
5 egg whites
1 teaspoon vanilla
1/2 teaspoon cream of tartar
2/3 cup sugar
Stir ice cream to soften. Spoon into a 1 and 1/2 quart bowl lined with clear plastic wrap. Invert ice cream onto cake; remove bowl. Freeze till firm.
For meringue, beat egg whites, vanilla, and cream of tartar till soft peaks form (tips stand straight). Transfer cake and icecream to baking sheet; remove plastic wrap. Spread meringue over all, sealing edge to baking sheet. Place oven rack in the lower position. the meringue will serve as an insulation so the icecream will not melt. Bike in a 500 degree oven for 2 or 3 minutes or till meringue is golden. Serve immediately. Makes 8 servings.
Peanut butter balls (so easy!)
1/2 cup peanut butter
3 tablespoons margarine or butter, softened
1 cup sifted powdered sugar
8 ounces confectionars sugar
stir together peanut butter and margarine. gradually add sugar , stirring till combined. Shape into 1 inch balls. place on waxed paper. let sit till dry, about 20 minutes. dip in confectionars sugar. makes about 30.

The best dessert ever- look on the back of a chocolate cake box. There's a recipe on the back called "Better than anything cake." That's a stupid name- we call it "Better than sex cake." Because that is truly what it is. It is the best cake in the world!! It is chocolate cake, then you drizzle carmel and evaporated milk on top. You refrigerate it overnight, and then you put whipped cream and chopped up Heath bar on top. It is SO good.

CHEESE CAKE
4 pkgs. Philadelphia cream cheese
18 zwieback or graham crackers
2 tablespoons butter
2 tablespoons sugar
1 cup plus 2 tablespoons sugar
2 tablespoons flour
a pinch of salt
1/2 vanilla bean, finely cut
4 egg yolks, beaten
1 cup sour cream
4 beaten egg whites
Crush the crackers finely and makes with two tablespoons each of butter and sugar.
Allow cream cheese to soften at room temperature. Beat softened cream cheese together with 1 cup plus 2 tablespoons of sugar. Add to level tablespoons flour, a pinch of salt, and finally chopped vanilla bean.
Stir in beaten yolks of four eggs. Combine and add 1 cup of sour cream. Fold in four stiffly beaten egg whites and pour into the crumb lined pan.
Bake at 350°F for about one hour.

Banana Split Cake
6 bananas split lengthwise
1 qt. strawberries halved
1 20 oz. crushed pineapple
2 cups graham cracker crumbs
1/2 cup melted butter
2 cups confectioners' sugar
2 eggs
1 cup butter, softened
1 16 oz. pkg. frozen whipped topping, thawed
1 cup chopped walnuts
fudge
1. Combine graham cracker crumbs with melted butter press into bottom of 9x12 baking dish. Chill in freezer for at least 15 min.
2.In medium bowl combine confectioners' sugar, eggs, and softened butter. Beat at medium speed for 20 min. (This step is very important, so don't try to save time)
3. Spread buttercream mixture evenly over chilled crust. Place bananas , cut side down, evenly on top of buttercream and spoon pineapple evenly on top of bananas. Distribute strawberries over top of pineapple and spread whipped topping evenly all over. Sprinkle with walnuts, drizzle the melted fudge on very top and chill in refrigerator for at least 3 hours or overnight.

2 cups crushed oreo cookies
1 stick butter/marg.
8 oz. cream cheese
1 cup sugar
2 small boxes chocolate instant pudding mix
2 1/2 cups milk
Large container of Cool Whip
Mix Oreos and Butter. Layer in a 9x13 casserole dish.
Mix cream cheese, sugar, and 1/2 container of Cool Whip. Layer on top of oreos.
Mix Pudding and milk. Layer on top of cream cheese mixture.
Spread rest of Cool Whip over pudding and top with curls of choclate or oreo crumbs.

Buy a bag and half thaw your bag of blackberries, blueberries and raspberries, add sugar & cool whip & heat to a low boil. Refrigerate mix. Buy a pound cake and slice it four times stuffing in your fruit mix. Dress the top with extra cool whip.

Here an easy one- good for summer time!
in a trifle bowl, layer:
slices of angle food cake
whipping cream (mixed with grated white chocolate & sugar, to taste)
sliced strawberries
(repeat)
top with extra grated white chocolate and garnish with strawberries
chill until ready to serve
