. . . why doesn't Genesis begin "In the beginning God created the Universe, all the galaxies, the solar system and Earth."
If He(sp?) did, He(sp?) should give Himself(sp?) some credit for it.

He did say that, He created the, "Heavens" Note Plural not Singular. In 2 Corinthians Chapt 12, verse2, Paul says "A man was caught up to the 3rd Heaven." First Heaven is Earth & it's atmosphere. Second Heaven is all Planets, Stars & Galaxies. The Third Heaven is beyond all the Creation we see, It is where God's Throne Is. If you look at any good Concordance you will find this is true. It helps to know Greek & Hebrew, but that is why God called for, "Apostles, Prophets, Evangelists, Pastors & Teachers. It is those Ministries that should be Teaching the Flock of Christ these things. Sadly many don't get beyond "Matt, Mark, Luke & John" Christianity, therefore their Flocks don't either. Pastors should "Feed the Flock, not Fleece the Flock."

You ever read the chronicles of Narnia? Some good books. Possibly not directly related to this question but I'm gonna base my answer on them anyway.
As Aslan would say ' You only hear your own story.' or in other words the bible is the word of God on earth, so it starts 'in the beginning God created the earth'
The bible, right at the very beginning, states that it is relevant to people who live on this planet.

easy because in the beginning God didn't create the universe, all the galaxies, the solar system and Earth. only because first he created the heavens and the earth, then light, then he divided that in the form of darkness, than a firmament ( heavens) then dry land( earth), then fruits and herbs and seeds. and so one and so forth. The almighty does say that he did create the universe you just got to take a closer look.

Gen 1:1 In the beginning God created the heaven and the earth. If you know anything about how things are worded in elizabethian english... you know that the Heavens includes the universe and all the spiritual heavens...
He did give himself all the credit... you just didn't know he did :D

Because it would have made no sense at the time. While the Bible is for all of us at all times, it was especially given to the people of the time. They didn't yet have any conception of all of the planets, galaxies, etc., that we now know exist via science. All they knew existed was the visible world, and so God explained that creation to them. God gives us just enough, because He knows what we can (and can't) handle. He isn't trying to show off or claim credit, just to help us know Him.

We are a species of ever adapting demigods bend on sufferance and personal rule.
Our kingdom lay at the bottom of the sea and our vehicle to finally rule is a good size rock and some chains.
Our kingdom is weakness, a weakness that grows. The King may be well known but the King is always utterly alone.
We are not meant to rule over all things and to command the winds and the sea.

Again with the attempt to literalize passages that have a meaning far beyond that of scientific facts.

The point is that as opposed to the gods and goddesses of surrounding peoples, the Hebrews claimed for THEIR God ALL power.

Yahweh wasn't just in charge of this aspect of nature or that location or those clans, He was in charge of EVERYTHING and EVERYONE because HE had created it all in the first place. With a sweeping statement like that, redundancy of the type you're advocating is rather silly.

I believe HE already glorified himself when nature has created. The heavens refers to all outer space, planets, galaxies, our atmosphere. HE created the universe along two other members of the Holy Trinity. Let everything that has breath praise the LORD. Praise the LORD. Psalm 150:6

I would think that at the time this was written there was above, here and below. By stating that God created the heaven that would naturally include the stars galaxies etc.
