That is funny that you asked this... because I just ate them for the first time!!!! it is ground up chicken made into a ball and breaded and deep fried. Kind of like a salmon patty only its chiken... they are good... alittle mushy, but good... I think they have a few seasonings added in with the chicken.

A croquette is an European thing, it is breaded and deep fried and usually in the shape of a sausage.
I've only tasted the beef ones dipped in dijon mustard in Holland, so delicious!
