Two reasons. #1) lemon juice as previously stated
#2)the tuna salad in the deli has been made in advance, giving the flavors time to marry.

Not sure...but my tuna salad is way better than the delis!
Try washing the tuna beforehand--place in a strainer and run cold water through it for a couple minutes, then squeeze out the excess water and then make the tuna salad. This should get rid of any "fishy" taste.

You might want to try adding a little bit of fresh lemon juice to the tuna salad. This brightens up the flavors and makes it a little less fishy.
Also, you may want to change the brand of tuna you're using, if you think it's too fishy.

If it tastes"fishy" at home it's probably either cheap or an off brand. Usually my homemade tuna doesn't taste that way. Use Star*Kist or Chicken of the Sea.
Also, sometimes the delicatessen puts in different spices or ingredients than you might use at home.

I make mine literally like a salad. I chop tomatoes, green onion, black olive, dill pickle, hard boiled egg, and mix with hellman's mayo, trader joe's 21 season salute, kosher salt, and black pepper. Try it.

It's a lot more fattening getting it at a place like that...more fattening usually tastes better, just a fact. :-)
