I'm getting around to planning the menu for our July camping trip. Do you have any favorite, easy supper recipes that don't require a lot of refridgerated (cooler-ed?) ingredients?

We will be cooking over the campfire or a small propane campstove.

Tin foil packets
1 onion (sliced)
1 carrot(peeled and sliced
piece of chicken
1 potato sliced 1/4 inch thick
few dallops of margerine or butter,
garlic
salt & pepper.

Layer potatos, onion, carrot, chicken sprinkle with spices, add a few dallops of margerine. Fold tin foil around food like an envelope. Wrap a second layer.

Start fire. After fire has burned and generated some coals break down wood so it is just coals. Put packets in coals. Turn after 15 minutes. Takes about 1/2 hr to 40 min.


Spider Dogs (kids treat)
On a stick appropriate for cooking hot dogs or marshmellows over the fire you will cook the spider dogs.

Take a hot dog. With a sharp knife, make cuts through both ends of the hot dog, leaving two inches in the middle to put in the stick. (At each end cut in half, roll 1/2 way cut again so it makes four "seperate legs" on each end) Put on a stick cook over fire until the legs open up and it resembles a spider.

1 can beans, drained
1 can corn, drained
1 small jar salsa or can Rotel tomatoes
Velveeta, cubed (Velveeta doesn't have to be refrigerated, scary!)
soft flour tortillas
any extras you like

Mix the first 4 ingredients in a skillet over the fire until the cheese melts.

Pile them into a tortilla with any toppings you like (canned black olives, chopped onions from the little ketchup-like pack that you can get at McDonalds or Burger King, fresh cilantro if you're feeling gourmet, etc.)

Roll up like a burrito and eat!

No refrigeration required and it goes well with chips and salsa

You can also skip the soft tortillas and serve it as a dip with tortilla chips. (or celery or bell pepper scoops if you are going for a little healthier)

The easiest campfood is freeze dried stuff. Just add hot water and poof! food. It is very good too. Mountain House has the best.

yes smores, you need crackers, herseys chocolate, and big marshmellos!!! put them together like a sandwicth!! then put it over the fire then after 1min or 30sec its done! then you enjoy!!!
